I believe what Jesus told us-that we MUST eat his flesh and drink his blood to have eternal life. I believe that, since he said this, he meant it, and gave us the means to do it.

I'm going to ignore most of what you've written, because it makes no sense how you criticize others' faith. Why not pay attention to the log in your own eye? Why worry about someone else's splinter?
We eat Christ's flesh because he told us to do so in order to have eternal life. You don't wanna believe what He told us, please, feel free.

If we were to accept your personal interpretation of scripture it would also render the sacrifice of Christ on the cross worthless as well.
It's not Christ's flesh which 'profits nothing' but our own.
When Christ said the flesh profits nothing, wasn't he referring to His flesh? He told them they needed to eat his flesh, then they asked "why does this man give us flesh to eat?" then he said that the flesh profits nothing, he said the words that he speaks is spirit and life. This however doesn't take away from Christs blood atonement or sacrifice. And ultimately his real sacrifice was that he became a servant. He was equal to God yet became a servant. He served not just with blood alone, but he endured reproach as well. That must have hurt him deeply. He gave up his life for us in every way.
Of course it's what that device was getting at that matters, but yes, he often did what you think he wouldn't do. Consider the case of Nicodemus who didn't get the idea of being born again...or the rich man who was told to give it all up and follow the Messiah. Jesus didn't argue with them or reason with any of them until they got his meaning right.

All the while believing that some guy in your church turns bread into God and then you all eat Him and pass God through your digestive system for at least 15 minutes..

If it was the only verse in the bible then maybe.. although there are other very clear portions of scripture which teach us plainly that WE are the body of Christ and that we no longer know Christ after the flesh.

Again, if it's His own flesh He's referring to, then how doesn't that render the sacrifice on the Cross as worthless as well? You can't have it both ways. And notice, that after pronouncing the radical dogma of the Real Presence that many disciples left and Jesus didn't go chasing after them saying, "Wait, wait, I was speaking metaphorically!"
Jesus left Himself with us in the Eucharist. It's how we are joined to him on a daily basis. I'm sure He's saddened at how many have rejected this most marvelous gift.

I think the rich man understood quite well. And Jesus did explain the meaning-as best as possible, to Nicodemus. If He was speaking strictly in symbolic terms in John 6 He could've at least said something like. "Hey, guys, don't take it so seriously; I wasn't really talking about eating my flesh and drinking my blood; I was speaking of "heavenly things", as I confided to Nicodemus.
