I watched the first few minutes about how the Mt. St. Helens eruption makes the understanding of the grand Canyon geology questionable. It was basically all wrong in to many ways to even start detailing. I skipped through some more and found more of the same with people waving their hands in my face saying there are questions in science therefore we can make up a fantastic scenario that is in no way relevant to the questions. honestly just to painful to watch. If there was a particular segment you thought really made sense, bring it up and maybe we can discuss that as otherwise it is just a PRATT (points refuted a thousand times) List.

Conclusions in science are provisional. E.g. they are conclusions derived from the data available at a given point in time.

I don't think "documentary" is the right term. You could ask how we know that it is not history. For example when it comes to the Noah's Ark story the simple fact that ice floats refutes it.

As @pitabread just noted, all scientific findings are provisional. That should not mean that you are safe if you walk off of a cliff. Denying evolution is not any different than denying gravity.
