If baptism is so important...

Then why didn't Christ call Saint Paul, one of the first Christian leaders to baptize?

"For Christ did not send me to baptize, but to preach the gospel, not with wisdom of words, lest the cross of Christ should be made of no effect. 1 Cor 1:17, NKJV"

I've always wondered what Catholics had to say about this verse.

Maybe for the same reason that priests normally baptize, not bishops. There is always an ordinary minister, and an extraordinary minister designated for administering a sacrament.
