The only change in those pictures is the perspective from which we are looking. The one of the left has us positioned well north of the equator. The one on the right has us viewing from directly above or slightly south of the equator.

Wrong. Try Again. Per Blue Marble creator, satellites don't fly high enough to capture an image of the entire earth, these images are composites.
At least three satellites are needed to see the entire Earth at once, but four are usually required due to the Earth's imperfect shape, mountains, and atmospheric light bending.

There are many satellites that can image all of the Earth (north pole to south pole, eastern horizon to western horizon) as it is facing them at any moment. Yes, many images we see are composite images, but that doesn't make them any less reliable or accurate.
