the secret to a good chicken fried steak starts out with double battering:

make a mixture of flour and salt & pepper (and I love tony cacheres seasoning as well, so I add some of that :0)

then mix an egg or two and some (depending on how much you make)

THEN - place meat in FLOUR mixture FIRST, then the EGG batter, then put it back in the FLOUR mixture a second time.

My ex mother in law taught me that years ago, and it's always worked.

Make sure you have the heat on MED/HI

You can use half veg. oil and half bacon grease to help with the crispiness AND flavor!

I always top it with white gravy (1/4 c. butter, 1/4 c. flour, salt & pepper and tony cacheres of course, and enough milk to make it as thick or thin as you like)

Fried Chicken seems to be my very favorite. I don't make it myself, I go to one of our grocery stores (like I did last night :0) and pick up one of those meal deals. Sorry, no recipes :0(

I will say however, that anytime you add Tony Chacheres spice to any meat, it really does add flavor. Try it in your fried chicken batter sometime!

it would be dogs. They are just the most wonderful companionship ever. They love you know matter what you look like, how big/small you are, smell like :0) whether you had a bad day/good day. And all they want back is a little love and some food of course :0) They're the best, they truly are.
