Are we living in a simulation?

Personally, I think maybe, but it wouldn't really change anything.

Any other thoughts?

Right, it would not change a thing about our experience. Our speculations about ultimate reality might be wrong, if that were the case, but it would not alter our every day experience. Prof. Vopson isn't saying much, really. That this could be a simulation is simply a supposition, and it sits there right along with all the other suppositions that people are willing to make. Isn't metaphysics fun?! :)

Its hard to say where is the line for the universe between being physically real, emergent, holographic or even simulated. As @public hermit said, our experiences are still the same. And nothing changes for Christianity.

The simulation is created by our own brains. It takes sensory input and recreates a representation of the world out there but our experience is in here.

Must be the same kind of scientists that were certain we all dreamt in B&W about 50 years ago.

Fun Fact: Back in the days of a famous movie franchise, possibly bundled on a DVD, I watched an interview with Keanu Reeves. He talked about a reading list he had to prepare for his character. I went and bought at least 2 books. Your post made me think of one of them, though may just be how my memory works. Simulacra and Simulation, Jean Baudrillard, 1981.

Or the kind that state that perfectly circular rainbows are impossible, when I know I've seen one.

Not so far.

There is no spoon... there is no spoon...
So Jesus said to them, “Because of your unbelief; for assuredly, I say to you, if you have faith as a mustard seed, you will say to this mountain, ‘Move from here to there,’ and it will move; and nothing will be impossible for you.
Matthew 17v20

Such verses can be seen as easier if things are not physically/materialistically real. However, somebody can say that because miracles are done by God (not by us), they can happen even if things are physically real.

In any case, there is an obvious difference between things that exist without our faith and without our focus on them - the things we call our common reality - and between miraculous things that require faith and focus, like in the verse you quoted.
So, even if our reality were not physically real, there is still something that makes it stable, default, without our will and without our agreement or consciousness. And this "something" requires some extra energy to be overcome, like in a struggle - faith, according to the verse.

His position is that the ‘Word’ from the Bible is computer code.

But does not provide any evidence.

Bible Warns Against Philosophies

Vain philosophies of men are considered harmful in the Bible, particularly in Colossians 2:8, where Paul warns Christians to beware of being taken captive through philosophy and empty deceit, according to the tradition of men and the basic principles of the world, rather than according to Christ.234+1
These philosophies are seen as potentially misleading and can corrupt one's understanding of the truth, as they often rely on human tradition and the elemental spiritual forces of this world rather than on Christ.234+1 The warning emphasizes the importance of grounding one's beliefs and practices in Christ rather than in human philosophies that may contradict or complicate the simplicity of the gospel.45
In the context of Colossians, Paul specifically warns against philosophies that can lead to legalism, mysticism, and asceticism, which are seen as potentially harmful deviations from the truth of Christ.4
The Bible also highlights the danger of mixing human philosophies with scripture, as this can lead to the misuse or misinterpretation of scripture to support personal philosophies that may be at odds with the gospel.5
Therefore, the Bible advises Christians to be cautious of vain philosophies and to ensure that their beliefs and practices are rooted in Christ's teachings rather than in human traditions and philosophies.234+1"""""
