When flat earthers do this experiment, they always choose small boats, that at a distance become too small for the angular resolution of the human eye.
Yep. Ferry from AArhus DK to Copenhagen. Wonderful boat ride, runs down the Kattegatt at about 40-45 knots. Heading south, watch the Aarhus skyline disappear into the water, and then watch them reemerge on the run back home. 10x50 binocs, iPhone 12, naked eyes, all the same. Southbound he buildings disappear into the sea from the bottom up, and magnification just makes the parts still above water bigger. Bits "below the water" still are. Take the elevator up to the Texas/hurricane deck, allows you to see about one floor lower. One the way home, the city rises from the sea in stately fashion, and both "bring 'em nears" reveal the same scene as the naked eye, only bigger. BTW, no imaginary "mist" obscuring anything on a warm summer day.I take it you've done this yourself ?

They didn't see the bottom part of the Chicago skyline for much of their journey because it was hidden by the curve of the earth. In fact what they were able to see is exactly what is predicted by the Globe model combining earth curvature and atmospheric refraction. This is a short video from just before the balloon burst at 121,000 feet, but if you pause the video and step through frame by frame {using "." and "," keys, you can find multiple frames where the horizon passes through the centre of view, at which point a straight line will remain a straight line regardless of whether it is horizontal, diagonal or vertical, and it is clear that the horizon curves downward at each endI've seen this before many times. The surface of the earth appears curved when the earth horizon is in the lower 3rd of the frame. Every now and then the camera POV will dip down and the earth horizon suddenly completely flattens out. And the horizon even inverts the other way in a concave manner if the horizon line moves up to the top 3rd of the frame.
Are you sure you're seeing real curvature?
This one's pretty bad. If you look close you can see the fisheye distorting the landscape itself at the edges of the screen, but of course what gives it away is the fisheye curvature is seen in the very beginning when the balloon is still on the ground looking out at a parking lot.
Even aside from obvious fisheye lenses... at least some measure curvature is part of the nature of camera lenses generally.
