Question for Orthodoxical types (EO, RO, GO, OO, ?O, &c.). I am looking for historical written materials, as far back as can be given (whether, in Greek, Latin, Syriac, even, and all the better if translated into English, but not necessary) that are not among the standard 'ECF', ante-Nicene (I have those already), etc that clearly detail theological doctrines. These doctrines can be anything that they believed. Time range, from say 200 AD to about 1500 AD.

If actual written material cannot be immediately provided, perhaps names with dates and areas, I can look for would also be useful.

I am especially looking for information on angels (not from apocryphal sources, per se), that they themselves wrote on, such as on Michael, Gabriel, Lucifer, &c, and their natures, beings, likenesses, and so on.

Also, for any non-orthodoxical types, have any other historical materials on those outside of orthodoxy, such as from the vaudois, passagini, waldensi, albigensi, sabbatini, insabbati, and so forth, that would be great too, again same time range as previous. Thank you.

If you've read the early Church Fathers you've just about covered everything. I'm not exactly sure what it is you're looking for. The beliefs and settlement of disputes of the timeframe of 200-1500 AD is found in the canons of the seven Ecumenical Councils. But you can find just about everything surviving here:

As to angels, I don't know if there is any defined angelology in Christianity the way there is in Judaism. There are various brief commentaries on angels here and there but I don't know if they are specific enough to answer your question. This can give you a starting point:

Angelology is not a specialty of mine by any means. I know St. Jacob of Serugh (+ c. 521), the great Syriac Orthodox saint, wrote on the dialogue between the archangel Gabriel and the Theotokos, but I've never read his writings on the subject (he is much more well-known among the Syriac and Indian Orthodox than among the Copts, for obvious reasons). From the summaries I've found, they are more of an exposition on St. Mary's typological connection to Eve than about the archangel specifically.

Among the Coptic people, the great St. Shenouda the Archmandrite (+ 451), is known to have spoken of "companion angels" (cf. the idea of 'guardian angels' in western Christianity) in some of his homilies, but outside of such extracts I don't get a sense that our tradition is overly concerned with defining too much in this area.

In addition to the works of St. Jacob of Sarugh, who I love, I also suggest these English language resources: The Sayings of the Desert Fathers, the Philokalia (as translated by Metropolitan Kallistos Ware, memory eternal, and his assistant, the Greek nun Mother Mary), the Fount of Wisdom by St. John of Damascus, Orthodox Dogmatic Theology by Protopresbyter Michael Pomazansky, Teachings of the Orthodox Faith by Fr. Azkoul, as well as the hymns on the feasts of the angels at Matins in the Eastern Orthodox churches and at Holy Psalmody in the Coptic Church, and also the Coptic Synaxarion and the Eastern Orthodox Synaxarium or the Prologue of Ohrid. Also the study notes on angels in the Orthodox Study Bible are extremely useful.

Unfortunately less of the Syriac Orthodox liturgy is translated, however, their Shorter Catechism is in English and provides a low level overview of Orthodox angelology.
