Preparation Instructions
- Mix coffee and brandy together in a cup
- Dip both sides of each finger biscuit into the mixture and arrange at the bottom of a shallow dish
- Cover the bottom with all the biscuits
- Pour the rest of the mixture over the biscuits
- Cream the egg yolks and castor sugar together until thick and pale yellow
- Add the second brandy and the cheese to the mixture and mix until smooth
- Beat egg whites until stiff and fold into the cheese mixture
- Pour mixture over the biscuits
- Leave in the refrigerator for 4 hours to set
- Sprinkle with cocoa powder just before serving
