I think the first important thing is to confront the harsh reality that they WERE indeed kicked out. And the same goes for all the hard passages of the OT, the next being Noah's flood. IMHO, one of the main things this viewpoint establishes is that G-d is in fact G-d, and it helps to flesh out what that means:
"Neither is there any creature that is not manifest in his sight: but all things [are] naked and opened unto the eyes of him with whom we have to do." (Hebrews 4:13)
In every instance, the answer to the question "why," is sin. The garden is the simplest, because it encompasses ALL sin, symbolically, in one unknown act. This has little practical value, since it doesn't define what "sin" is, other than intentionally violating G-d's clear command; but this story does "lay a foundation." Each hard passage of Scripture gives more insight with practical application for our own lives, about specific sin. Therefore, skipping over these is a terrible waste of wisdom! Simultaneously, we can very much try to tackle some of these stories when we're not ready to do so, and make shipwreck concerning our Faith. We see that all over CF on a fairly regular basis.
It's really important for a Christian to grow on the sincere milk of the Word, get grounded in the NT, and learn to be led by the Holy Spirit so the eyes of our understanding gets opened by the Lord Himself.
They had come to the knowledge of the difference between good and evil when they sinned. But that's not why they had to leave.
The Tree of Life was there, and it was a source of food for them. Had they continued to eat it, they would have lived eternally in sin.
They had to go, but the Tree remained.

This didn't go as I expected. I was really looking for the standard, short answer i.e. Because they disobeyed God by eating the apple. I started this thread because I think most people are taught that. Much in the same way that most people think Marie Antoinette said "Let them eat cake." Yesterday, I read that it was actually because God thought they would probably be snacking on the tree of life next and become immortal. Many of you replied with well thought out answers. I wasn't looking for that.
