While searching online for anabaptist and barking I came upon this hostile source.

"In 1613, a great number of women of the
district of Ammou, in the vicinity of Aego, were
seized with a convulsive malady,, similar in many
respects to that which prevailed in several convents
of Germany in the preceding century. The out
breaks of this disease manifested themselves,
sometimes by violent muscular contractions,
and symptoms which were taken for those of epi
lepsy; at other times by convulsive outcries re
sembling the barking of dogs, whence it got the
name of " Mai de Laira" The phenomena of
both forms of this convulsive hysterical disease
were regarded as the results of diabolical influences
and obsession,
At one time eighty women in a smaller com
munity laboured under this disease/ barking in the
church like so many dogs, and rendering it im
possible to remain at all collected or composed in
prayer. Delancre, who believed firmly in the
diabolical character of this and most other nervous
disorders, arid who has written an account of the
former, observes, that fortunately it so happened
when the women were in the paroxysms of this
disease induced by sorcery, the patients were in the
habit of crying out the names of those by whom
they had been put into relations with demons and
this was a particular mercy of God to enable the
authorities immediately to seize on the persons of
tho?e who were thus named, and thus vast numbers
were brought to justice who ultimately confessed
their crimes.
During the attack the women of Ammou were
like persons in raging madness. They flung them
selves on the floor, crawled on the ground like
reptiles, and beat their heads, trunks and members

If this was written by someone who was opposed to the Anabaptists, or that it was a comment on the later Anabaptists who went away from the original foundations of the movement, then to compare the manifestations that might have happened among them to those who were mentally unbalanced can be taken with a grain of salt. Anyway, the report doesn't mention Anabaptists at all. I think this barking like dogs business in the Brownsville revival is pretty minor and it has been made major by religious folk opposed to the revival, maybe because they got convicted of their religiosity and hypocrisy and instead of getting right with God, decided to try and discredit the movement so to give themselves a bit of relief from the conviction. Conviction of sin either causes repentance of opposition. It is either a revival or a riot.

If the described behaviour is factual, what other than demonic possession could it have been?

There are a number of physical factors that can result in mental disorders. For example, not all epileptic seizures are demonic in in inspiration and epilepsy is a physical illness that can be treated medically.

Sounds like maybe "hysteria" or conversion disorders. People are inherently mimetic and imitate what they see happening, and if there is a great deal of psychological stress or trauma, might be prone to expressing themselves in that way.

How do we know critics were convicted by the Holy Spirit?

There is a phenomenon called pseudoepilepsy or non-epileptic seizures, where a person will display emotions which cannot be consciously expressed through seemingly involuntary bodily movements.
