I am good on calcium; I will be using dry milk powder for that. Vitamin D I can get that from a 30-minute walk in the sun.

Problem is bread goes bad fast, I will be needing a different source for my carbs and dietary fiber. Other problem is that fruits and vegetables also go bad quickly.
What foods will be good replacements for long term prepping?

So far, I found granola bars as a possible alternative to bread, but I haven't found anything really to help with the vitamins and minerals. I would prefer any food items with a long shelf life than a multi-vitamin. What are our options?

If it can at least last 1 month, rather than 1 week. I will prefer that over fresh fruits and vegetables.

I am gonna ask the AI for you, cos that is what Christian brothers must do for each other. As a person who is not a prepper, I know nothing about prepping, but the AI is hooked up to medical textbooks (as in health stuff), so it should help. I will be watching some TV on my computer, so the AI will be slowed down due to limited RAM, but expect a response in an hour or less.

The AI is still processing information, cos I only have 8 GB of RAM and I am watching cop chase type videos. Legumes are on the list, along with flax seeds and sunflower seeds. Brown rice and dried fruit are also on the list.

Rice is probably your best bet. It’s cheap, can last two years, and makes three times as much as you’re storing. You do need to keep it in an airtight container in a cool place.

I would also consider pinto beans for protein. They’re best if eaten within 2-3 years but many sources say they can actually last a lot longer than that without spoiling. And they also swell when cooking much similar to rice. 1 cup of pinto beans will make 3 cups when cooked. They also go well with rice when mixed together. One 5 gal bucket of rice and one 5 gal bucket of pinto beans will make 30 gal of food. Just make sure you store enough water to cook them.

For long-term storage (one month at room temperature), you may consider the following non-perishable food items that are rich in carbohydrates, vitamins, and minerals:
  1. Whole grains such as brown rice, oats, barley, quinoa, or bulgur. They can last for up to a year when stored properly.
  2. Dried legumes (beans, lentils) which are high in fiber, protein, and various vitamins and minerals. They can be stored for several years if kept in an airtight container.
  3. Nuts and seeds such as almonds, walnuts, flaxseeds, or sunflower seeds that provide healthy fats, proteins, fiber, and essential minerals like magnesium and zinc. They can last for months when stored properly in cool, dry conditions.
  4. Dried fruits like raisins, apricots, prunes, figs, dates, etc., which offer vitamins A and C, iron, potassium, and other minerals. These should be consumed within a year or two after opening the package to prevent spoilage.
  5. Starchy root vegetables such as potatoes (not sweet potatoes), cassava, tapioca, or yams can also last for several months when stored in a cool, dark place.

Pasta and Rice prep well. We have Mylar bags of rice that are over 12 years old. We open the oldest ones and use them. We rinse the rice and soak it in water with a squirt of lemon juice to eliminate the metallic taste. I'm not sure where that taste comes from. Since the acid in the lemon juice eliminates the issue, it could be a Ph thing. The interior of the Mylar bags is coated with plastic, so the taste/odor may come from that lining. We cook the rice for an additional couple of minutes. You really cannot tell the difference between this rice and fresh. We fed the rice to people who could not tell the difference. High carbs in the rice. The pasta is also like new. We have a vacuum sealer. The bags are just large enough to lay the spaghetti in vertically, and they hold a full 1-pound box. Pasta is also high carb. Bread is also high in carbohydrates but is more difficult to store in the long term. One of the issues with long-term prepping is the loss of some nutritional content. We plan to supplement this with fresh vegetables from the garden and nature. There are some herbs and simple plants that are excellent for vitamins. We have also started larger-scale prepping of canned goods, which will keep us long beyond the "fresh by" or "expiration" dates. The main thrust is meat and fat content. Fat is very difficult to prep long-term because it becomes rancid relatively quickly.
When I say long-term, I am talking years - decades.

Asians mostly eat rice. It is quick and easy to cook in a rice cooker. You can get a box of yellow rice which has chicken fat in it. Or rice and beans. They have a long shelf life. At least a years of not longer. Of course freeze dried food lasts a lot longer. I like to make soup in the rice cooker.

I love cassava but I tend to be lazy so I will get a flour and make pancakes. Some of the women make a really good desert out of it.
I am having a Panera skillet flatbread right now, as my workplace gave away free Panera stuff.

Taco Bell is pretty affordable. Hopefully, you can afford meals well. Tell us your secrets here on the forum, on how you spend $3 a day on food.

I live on $1 /day. Although cost of groceries where I live is probably cheaper.

Steamed rice, bread, sardines or tuna in small cans, corn and sometimes with peas and garlic, milk, cheese and DIY dark chocolate snack. Same food everyday. No fruits, no supplements. I'm borderline underweight though probably from "insufficient" calories. I workout with weights to make sure my bones and muscles don't atrophy from my small weight. If finances are better, I'd definitely include fruits in my diet and maybe pasta and potatoes.

Could be a lot of people that live on $1 a day. It is amazing they can keep people alive for that small amount. It is difficult for the Americans that spend $15 on lunch to comprehend. Taco bell still sells a burrito with beans, rice and cheese for close to $1. Yet they want people to spend $7or $8 for a meal. I have a lot of respect that they are willing to lose money on the dollar taco to make sure people are getting fed.

My son is in the Philippines right now and he instantly had a entourage of people at his beck and call for whatever he wants. Because they know he will not only feed them, they are going to eat really good food. At work they give my son $60 a day for food. I said: what you can turn in receipts for up to $60 and he said no. They give that to him if he uses it or not. He ate a $100 meal once. They are kind of mad at his team right now because the production went down for an hour. They said that cost them a million dollars. They are doing quality control for a 12 billion dollar factory. That is the average price for semi conductors.

This is incredible. If your son is splurging on food, why are you only spending $3 on food? Are you doing this on purpose?

I rarely ate good food and when I do it's for free because somebody brought us food. At least I can see now it will not be so bad if the world turns into sh#@ someday. We've been eating from cheap, canned foods (inc vegetables) for several months now and we're ok. I'm even training myself in figure and street skating without problems. Bones and muscles very strong, no problems with balance and coordination. Skating would actually be an excellent way to move around in a post apocalyptic world. Roads would probably be blocked by burnt cars, craters, debris and nobody's going to rob your skates because they probably won't know how to use them. It is also much easier to fire a weapon on skates than riding a bike for example. You need both hands to fire an assault rifle with accuracy and you can quickly and easily face backwards on skates to fire a weapon to the rear without changing direction of travel.

why are you only spending $3 on food?
I do not see any reason to spend more. For example for $4 I can buy a soup mix that gives me 8 servings. I usually only eat one serving in a day which is one cup of soup and that cost me fifty cents. often I eat one serving of beans and one serving of rice. That is a lot of food for me for $1.50.
