If a person feels they have committed the unpardonable sin, what is their incentive to go back to Christianity as there is no salvation in it for them? Hebrews 6 talks of people that can't be forgiven. Why would an apostate return to Christianity knowing that the Bible dooms them to Hell?
The unpardonable sin involves not wanting to be pardoned. If you change your mind, God is perfectly eager to pardon you.

What sin would they have committed that is unpardonable?

Hebrews 6 talks of people that can't be forgiven.

No. Hebrews 6 speaks of people that will not be forgiven.

Why would an apostate return to Christianity knowing that the Bible dooms them to Hell?

God has promised to save His people. Pure and simple, if one is not His, they have no hope of salvation. There is no such thing as those who have tasted salvation and then lose it. Salvation is a gift from God and held for us by the power of God. We cannot lose that which we were given when we didn't deserve it. This is not an advocation of ungodly living. It is simply an affirmation that the gift of salvation was given because of God's plan, not our merit and of God's ability to finish the work (i.e., salvation) He began in us. Likewise, we trust in His promise that Christ shall lose none that the Father has given Him.

Lastly, it is important to note that the author of Hebrews distinguishes between those who "fall away" and those who obtain the "things that accompany salvation:

Hebrew 6:9
But, beloved, we are confident of better things concerning you, yes, things that accompany salvation, though we speak in this manner.

God bless

The only sin that is unpardonable is the unrepentant sin.

God will take you back, if you try to live free from sin.
No one can live without sin, so God will forgive you again. Jesus gave his life s others may live eternity.

The lost son tells us God will welcome you home, no matter what you did while away. You are still his child.

How can the creator of the Universe not have the power to forgive? No sin is greater then another, and the wages of sin is death. But Jesus died to pay for our sins.
Paid in full, go forth and try to sin no more.
