On point 1, yes, that's true. Regarding point two, I think the councils shouldn't be considered "Roman Catholic," per se. The first council of Nicea, for example, was ecumenical.
When I refer to Catholic theologians, I'm referring to the later ones who appeared in the early middle ages, well before the Reformation. I think this is before certain doctrinal errors crept into the Catholic Church. At that time, many Catholic theologians were staunch defenders of the faith, and wrote many words to defend the doctrine of the Trinity.
And of course, don't forget that reformers such as Martin Luther never truly wanted to leave the Catholic Church.
