We try in words to describe as best we can a great mystery. To me, the use of "substance" in the Catechism means "the reality." Once the bread and wine are consecrated the reality is that they are now the Body and Blood of Jesus Christ.
Yes, I am for such an understanding, rather than some kind of platonic particle substrate.

But in the spiritual world, the ordained priest stands in the place of Jesus at the Last Supper and as he consecrates the Host the Lord is both the priest and He is above entering as it flows from above to change it. [Except visually]

Put it this way - the Koine Greek I was told, Jesus actually said "Make this a sacrifice present." Not in remembrance...
But again neither is the actual Greeting of St Gabriel to the Virgin translated very specifically.

So many words do not translate from Koine Greek to English word for word.

It seems to me that the interchanging of transubstantiate and transform is the problem. The bread is not "transformed" into Christ - IMHO - the bread ceases instantly to exist, leaving behind only its past natural accidents, and instantly where the bread was, now Jesus is, not bound in any accidents but supernaturally free in their regard, but bound in the supernatural substance of His resurrected and glorified Self.
Again, Fide has his think completely sorted.

This is exactly the way Transubstantiation works.

In modern parlance I think it's close to say that the Bread and Wine are avatars after Transubstantiation. They look, act and interact with their environment like bread and wine but are, in fact, the body and blood of Christ.

It may be helpful in the short term to consider an analogy with "avatar", but if you're seeking parallels in Hinduism, I recommend that the analogy will be less helpful than it may seem. Revealed Christian truth is unique, and complete only in itself. To truly understand it in its many mysteries, one must set aside analogies and partial similarities with other religions and faiths, and listen to divine Christian revelation in itself. Short-cuts to authentic Truth using maps devised by man will not work; God can speak for Himself much better!
