They do fly straight (with some slight deviation sometimes to avoid unfavourable winds). If you mark the route on a globe, you can see that.

A flat earth is so easy to disprove - on your own. You don't need to take anyone else's word, flight paths, documentaries, etc. How to prove the earth is not flat? Simply earn yourself a pilot's license and fly in one direction long enough until you're back at your starting point. Game over.

Therein lies the rub...could a person of the "flat-earth" mindset have the knowledge to pass the tests required to earn a pilots license? lol

One problem that seems to confuse people is the "projection" of spherical surface onto a flat surface in the form of a map. This cannot be done without introducing a distortion. This can be likened to very carefully peeling an orange all in one piece and then trying to flatten the whole thing out. This cannot be done without a good deal of stretching (which doesn't work well with orange peels) or by cutting the peel strategically to reduce the stretching. The article below details a number of projections that have been attempted over the centuries:

The Mercator projection is one of the earliest and most common but it is also one of the most distorted. It is reasonably accurate close to the equator but moving north and south the distortion eventually becomes extreme. Greenland and Africa appear to be the same size but in reality Greenland is only 1/6 the size of Africa.

We all know that the shortest distance between two points on a flat surface is the straight line connecting them. However on a spherical surface a straight line can only connect them by boring through the body of the sphere. If we are restricted just to the surface of the sphere then the shortest distance is actually an arc (try this with a string on a globe) which is sometimes termed a "great circle route". When we try to map a great circle route onto a flat map it comes as no surprise that it projects as a curve giving the mistaken illusion that it is not actually the shortest distance.
