WACKY CAKE (an 8"x 8" Crazy Cake)

(Make a cup of instant coffee and set it aside for the frosting.)

Into ungreased 8 x 8 Pyrex baking dish mix the following, sifted together:

1 1/2 cups flour
1 cup sugar
3 tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt


Make 3 holes in dry ingredients.

Into one put 6 tablespoons vegetable oil. (1/3 cup oil)
Into one put 1 teaspoon vanilla.
Into one put 1 tablespoon vinegar.


Then pour 1 cup cold water over all and stir with a fork until smooth. Make sure you moisten all of the dry ingredients.
Bake at 350 degrees for about 30 minutes.



While the cake is baking, make the frosting. You have to have it ready when the cake comes out of the oven.

FROSTING FOR WACKY CAKE

2 cups powdered sugar
3 tablespoons cocoa
1/2 cup melted margarine
1 teaspoon vanilla
3 tablespoons cold liquid coffee


Mix all ingredients together, leaving the coffee until last, and pour on hot cake.

Enjoy!

I love that, too, but the red food coloring is only for looks.

Oh yes.. The deep rich colour, how can one ever resist that? Do you do fruit cakes as well like the Christmas-sy type? I love them.

I've made a no-bake fruit cake for Christmas but some of my recipes disappeared (kleptomaniac). I keep hoping I find it someday.

Searching the internet I found this recipe. The ingredients sound the same, but the photo looks different:

Icebox Fruitcake Recipe

The first time I made my cake was in the seventies.

My husband introduced me to Claxton Fruitcake and we bought one every year. You probably can't find it in the U. K. Another recipe I loved was Orange-Raisin Steamed Pudding which my husband accidentally threw away.:(

This cake wasn't very large, but none of our children would eat anything with candied fruit.

made homemade vanilla pudding Oh my gosh. The hardest part is stirring almost constantly but it is well worth the patience. Then took half the cooked mixture and added cocoa for the chocolate lovers. Cant wait to see their reaction.

This used to be my go-to pumpkin pie at one time. The bisquick falls to the bottom and makes a crust. Easy pleasy

1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup Original Bisquick™ mix
1/2 cup sugar
1 cup evaporated milk
1 1/2 tablespoon butter or margarine, softened
1 teaspoons pumpkin pie spice
1 teaspoon vanilla
2 eggs
Whipped topping, if desired

Heat oven to 350°F. Grease 9-inch pie plate.
Stir all ingredients except whipped topping until blended. Pour into pie plate
Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.
  • To lower the fat to just 4 grams and the calories to 170 per serving, use 1 1/2 cups of 1% milk for the evaporated milk
  • If you don't have pumpkin pie spice on hand, use 1/2 teaspoon each of ground cinnamon, ground nutmeg and ground ginger.

This is a "sweet" meant to help.

Talking with a friend who is doing a content home inventory during this pandermic. They say only about 40% of homeowners have it done. Of course, once completed, it needs to be put in a safe place n updated as needed. So ...
