I need some new ideas cause I'm getting in a rut and snacking on junk

Maybe some other moms of young kids 3-8 are getting in a rut with meals, too?

I'm hoping it isn't just me.

mozz cheese
and any other veggie ya want to put on it

baked in the oven at 375

Your not alone!

I have the same trouble also. I just get tired of the same thing over and over. I am real bad when my husband goes out of town, then we really snack! I am also a picky eater so that doesn't help me.

I'm in a meal rut and my daughter is only 18 months! Thanks for the ideas RTM. We don't get mini pizzas here but I can make a plan - I'll definitely try that one because she loves anything with cheese!

Each of my kids have different preferences so we do a lot of “build your own” meals so they can add the ingredients that they like:

Salads or wraps (deli meats, cheese, boiled eggs, lettuce, raw garden veges, dressings).

Tacos, chips and cheese or haystacks (tortilla chips crushed, saltine crackers, rice, taco meat, cheese, olives, lettuce, salsa, sour cream).

Breakfasts (eggs, bacon or sausage, toast or bagels, all kinds of pancakes &#8230. They like scrambled eggs, cheese and sausage in wraps, too.

Baked potatoes (topped with cheese, sour cream, broccoli or chili).

Any kind of chicken (chicken and rice, baked chicken, grilled chicken, chicken nuggets, chicken casseroles).

Pasta (lasagna, spaghetti, manicotti &#8230.

They love meats of any kind it seems (roast, hamburgers)

Soups (though not my kids favorite, I like to make homemade soups like chili, noodle or turkey vegetable and serve with breadsticks).

Sides I use a lot are applesauce, cottage cheese, canned fruits, or a favorite is just sliced strawberries and bananas mixed with pineapple juice or milk; cooked veges (beans, peas, corn on the cob).

It seems the simpler I make it, but with choices, the more they like it.

Thanks skyblue, I've not made manicotti before, But I might look for a simple recipe, that sounds good, my kids love pasta.
And the homemade soup is something i would like,I'm not sure about the kiddos.

Here's mine that I got from a newspaper. I like it because you don't have to cook the noodles first ... and if your kids don't like "all the green stuff," you can simplify and just use your favorite spagetti sauce. My kids like to help stuff the noodles, too.

Manicotti
8 oz package manicotti noodles
1 lb cottage cheese
1 lb mozzarella cheese, shredded (reserve 1 cup to sprinkle over top)
1 lb ground beef chuck
8 oz can tomato sauce
6 oz can tomato paste
1 T Italian seasoning, crushed in hand
½ green pepper, diced
½ c chopped onion
¾ c water
¾ t salt
¼ t ground black pepper

Combine mozzarella and cottage cheese in a medium bowl. Using a teaspoon, stuff the cheese into uncooked manicotti noodles. Lace stuffed noodles in a 9 x 13 baking dish and set aside. Brown ground beef and pour off the fat. Add remaining ingredients. Pour the mixture over the noodles. Sprinkle with cheese. Bake at 350 for 1 hour. Set 5 minutes before serving.

No pre-cooking the noodles on this one, too, and it's simple to prepare.

Lasagna
Sauce: 1 lb ground beef, browned, 1 c water, 32 oz spaghetti sauce
Cheese mixture: 16 oz ricotta and/or cottage cheese, ¼ c parsley flakes, 1/8 c Parmesan cheese, 3 eggs, 3 c mozzarella cheese
Layer sauce, \lasagna noodles (uncooked), sauce, cheese, \noodles, sauce, cheese, \noodles, sauce. Cover tightly with foil. Bake 350 1 hour. Uncover and bake additional 15 minutes.

My family likes manicotti to but I cheat and use Classico's Fire Roasted Tomato sauce and save time!

We don't cook for the kids, we cook for the adults, luckily my kids have learned to enjoy or at least try what we like. We grill a lot so we have

salmon-cooked on ceder planks-yummy and easy
steak or chicken several night of the week, we also like
tostadas-I cook the tortilla shells myself, every likes it
baked chicken over rice with mushroom soup-easy
DH makes wonderful fried chicken tenderloins sometimes, we love those!!!
Pizza bread!!! just brown ground hambger or turkey, mix
in spaghetti sauce, again I like Classico,
pour over long halves of french bread, top
with pepperoni and mozzerella cheese and
bake for 30 min at 350 then broil til it's
slightly brown.

oooh, TCat please let me know how you cook your own tortilla shells? I absolutely love them but they're very expensive here!
