I'm currently transitioning over to vegetarianism for various health reasons. I've tried this before, but relied too much on soy products and tofu. I was trying to replace meat, which didn't work. I've decided to just cut it out and not add in products that I don't really care for, such as tofu.

So, my problem is that I am having a hard time eating anything other than salad. I need quick snack-type foods, but don't want to load up on crackers and such. Unfortunatly bananas go from green to brown in about 5 minutes. Anyway, do you guys have any thoughts on food that I can make and maybe freeze to grab later when I want it???

Carrots and celery with peanutbutter is always good.

I take fresh fruit, chop it up and put it in tiny snack bags then freeze it. Then I can take it out for a few minutes, add some juice and/or water, do a quick blendie thing in a blender and it's great. Sometimes I use splenda to sweeten it or yogurt.

I also like All Bran Bars (with the added benefit of fiber) these probably have milk though.

And if you're not vegan or anti-dairy there are always yogurts.

I think hummus and plain yogurt makes a good dip for veggies or crackers. I even use it in place of mustard or mayo. But you didn't want crackers, perhaps for your carrots and celery.

You can always freeze soups---cabbage soup, chicken noodle soup (use vegetable stock instead of chicken broth and don't add chicken), barley soup, carrot soups, potato soup, etc.

There are always sandwhiches, stirfry, and pasta---all which can be healthy additions. You can freeze pasta too. I've never tried freezing stirfry or sandwhiches though. I don't think most sandwhiches would hold up well to that.
