mmmm... soup. My mom used to make a sort of mexican type, chilli soup. It wasn't an original Mexican dish, but a recipe she had found or developped. Or carrot/coriander soup! Or garlic soup with bacon and bread on the side. Or chinese soup with corn. Or of course: fresh peasoup with sausage. Fresh nettlesoup. Onionsoup. Thick vegetable soup, no chunks. Brussels andive soup... broccoli soup, coliflower soup. Asparagus soup....

mmmmmm.... I'm coming to your house for dinner!!

I merely made ham and broccoli chowder ( it's like a 10 miunte recipie from left over ham and frozen broccoli and frozen hashbrowns, milk, cheese and spices....)
My favorite is actually cream of pea- it's like split pea soup, but there's milk and egg in it- and no ham!

That cream pea soup sounds good. Any chance of the recipe?
Sure! I dunno the metric conversions, though- sorry!

An onion diced (I like a lot of onion- start with one large onion and then change it to suit your tastes)

garlic minced- about 4-6 cloves - again suit to your tastes

olive oil- about 2 Tablespoons

3-4 carrots chopped however you like the best (for this soup I usually dice them into large pieces)

1 Tablespoon Shoyu Soy sauce(this soy sauce is a Natrurally brewed type)

In a large soup pot, sautee onion and garlic in the olive oil until the onions are translucent (about 4 miuntes). Add carrots and sautee another 2 minutes.
Add soy sauce and sautee another 1-2 minutes


6 cups water

1 bag (about 2 cups) dry split peas

dump these into the pot and cook covered for about 30 minutes, over medium low heat, stirring from time to time. Then add to the pot:

3 bullion cubes (I usually use vegetable bullion)

1-3 bay leaves depending on your preference

salt to taste (I use a lot, as I think soup needs a lot if salt)

2 teaspoons of sugar

2 Tablespoons of dried parsley (or some other herbs to taste)

Cook for another 15 minutes, stirring occassionally. Then prepare:

3 Tablespoons olive oil

3 Tablespoons flour

2 cups milk

2 eggs (or egg whites) beaten (I use the whole egg, just because it's easier!)

mix the flour and oil together using your fingers to make a paste. Add mixture to soup and stir. Beat eggs in a bowl . Add milk to soup stirring constantly, bring soup up to the boiling point without letting it actually boil. Add a ladle or two of hot soup to the eggs, mix then together in the bowl and then add to the soup pot. Cook soup for another 1-2 minutes, stirring constantly, without letting the soup boil. Serve hot. Enjoy!

Seriously, my better half (she's Italian) does a nice soupy Pasta e Fagioli. Her Lentil and Rice Soup is also a favorite of mine. Viva Italia!

Just because this thread made me want to, I've made 'lazy housewife' soup today. *G*

Recipe:
- go to your pantry
- Find what vegetables you have canned.
- In my case: can of flageolet beans, and small can of peas and carrots
- Put 'an uncertain amount, but not too much' water in a pot.
- Add partially drained cans
- heat for uncertain amount of time but don't let it boil too long.
- Use 'mixer' or 'blender'
- add one or two cloves
- use mixer or blender again
- add 'about half' of a crumbled stock cube
- let come to the boil
- have delicious home made soup 'the lazy way'.

I have a similar recipie I plan to use tonight. I call it the 'lazy husband way"

- go to wife.
- ask for food.
* repeat steps 1 and 2 as needed until full.

Tonight we're having pho, which is a Vietnamese soup with rice-noodles in it. Plus fresh herbs like basil leaves & cilantro, lime and hot chili-sauce (if you are brave). It can be made with beef, chicken or (on Fridays & all fast days) seafood!

I like to slow-cook my stock for several hours, which is the main thing. It's so good and nutritious, too!
