K, this is for people like me that can't have eggs or dairy. Enjoy! It's actually pretty good!

Wacky Cake

1 1/2 cups flour
1 c sugar
1 tsp. baking powder

1 tsp. baking soda
1/2 tsp. salt
4 Tbsp. cocoa powder

Mix these ingredients with a spoon. Then with the spoon make 3 wells . One small, one medium and one large. Into these wells put
1 tsp. vanilla
1 Tbsp. vinegar
5 Tbsp. oil

Then pour 1 cup of hot tap water over all of this and mix together with a spoon. Pour into greased 8x8 pan and bake at 325 for 30 minutes. Enjoy!

Fruit Crisp

This is heavenly--and easy to make:

Grease a 9x13 casserole dish. I prefer to use olive oil, but butter or margarine works as well.
Then dump sliced fruit, enough to cover the bottom of the dish. Peaches are good in season, even canned peaches (a five pound can--drain them first). You can use frozen fruit, or slice up apples.
If the fruit is sour, sprinkle with sugar, up to 1/2 cup.

In a small container, mix 1 cup flour, 1 cup sugar and 1 teaspoon baking powder together. Add a raw egg, all at once. Mix together with a fork until it is uniformly crumbly. Spread this mixture evenly over the fruit.

Melt 1/4 cup butter or margarine and pour in thin trickles over the crisp. You can substitute olive oil for the butter, to make this a healthier recipe.

Bake 350 degrees, about one hour until golden brown. Serve warm.

This is WONDERFUL with vanilla ice cream.

I keep the big cans of peaches (5 pounds) in the house for that purpose. I drain the liquid and go.

This way I can make this recipe fast--even when unexpected company shows up. It takes a while to bake, but meanwhile cook dinner, entertain, etc, and everybody is all impressed when this arrives, made from scratch and smelling heavenly.

Green Bean Casserole

INGREDIENTS:

  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 4 cups cooked green beans
  • 1/8 teaspoon pepper
  • 1/2 cup skim milk
  • 1 1/3 cups French fried onions
PREPARATION:

Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.

This is supposed to serve 6 but when I make it my daughter and I split it and have it for dinner.

A tasty way to get your veggies in.

I have a great new recipee:

Burnt Pizza

You should be more creative.....I would call it "Crispy Pizza" or "Crunchy Pizza" or maybe "Blackened Pizza" but never "Burnt Pizza" ^_^

Have made my share of this recipe when I forgot to set the timer.
