• The General Mental Health Forum is now a Read Only Forum. As we had two large areas making it difficult for many to find, we decided to combine the Mental Health & the Recovery sections of the forum into Mental Health & Recovery as a whole. Physical Health still remains as it's own area within the entire Recovery area.

    If you are having struggles, need support in a particular area that you aren't finding a specific recovery area forum, you may find the General Struggles forum a great place to post. Any any that is related to emotions, self-esteem, insomnia, anger, relationship dynamics due to mental health and recovery and other issues that don't fit better in another forum would be examples of topics that might go there.

    If you have spiritual issues related to a mental health and recovery issue, please use the Recovery Related Spiritual Advice forum. This forum is designed to be like Christian Advice, only for recovery type of issues. Recovery being like a family in many ways, allows us to support one another together. These recepies I got from a sister here in CF

Turkey and Wild Rice Salad

2 cups long grain and wild rice -- cooked
1/2 pound turkey breast -- cooked and cut
-- into 1/4-inch cubes
1/2 pound blanched snow peas
1 red pepper -- seeded and chopped
1/4 cup fresh parsley -- chopped

ORANGE VINAIGRETTE:
2 tablespoons red wine vinegar
1 tablespoon low sodium prepared mustard
1 1/2 teaspoons grated orange rind
1/4 teaspoon black pepper
1/4 cup nonfat chicken broth
or water

[FONT=Courier New, Courier, Monospace]In a large serving bowl, combine rice and next 4 ingredients. Combine vinegar, mustard, orange rind, pepper, chicken broth, beat well with a wire whisk. Add Orange Vinaigrette to rice mixture and toss well.[/FONT]

Baked Apples

2 cooking apples, orange juice, 2 tablespoons raisins, ground
cinnamon, 1/2 cup unsweetened apple juice and 1 teaspoon cornstarch.
Preheat oven to 350f. Peel and core the apples. Brush with orange
juice on the peeled surface. Stuff the cavities with raisins.
Sprinkle on some cinnamon. Place the apples in a shallow baking pan.
Combine the apple juice and cornstarch until smooth. Pour into the
bottom of the pan. Bake for 20 - 25 minutes or until a fork pierces
the surface easily. Serve warm or cold with the sauce.

Fruit cake

Take a hand full with dry plums, apricots, raisins, almonds in a food cutter.Take a banana ( you can take other fruits that you have home too for example apple,figs some seeds and nuts)When you have cut all this take littl oil.Mix with the dough.Take the dought in a baking tin (pie) with bakingpaper.Then take 2 egg white and whisp them with little fructose.Whisp so it the eggwhite be as "meringue".let it be in the oven about 10 - 15 minutes 150 - 170 C (sorry I don`t know in Farenheit:cry: )

You can decorations the cake with lemonmelissa (Melissa officinalis)

This is the best diabetescake I have ever tasted.Other cakes have fealt so dry in taste but this was yummie :yum: :yum: for me

Blueberry-Rhubarb Jam
Ingredients:
8 c Blueberries
4 c Rhubarb, chopped in 1 inch pieces
1 ts Lemon rind, grated
2 tb Lemon juice
1 c Water
4 c Granulated sugar
Procedure:
In a large heavy saucepan, combine blueberries, rhubarb, lemon rind and juice and water. Bring to a boil, stirring frequently, reduce heat and simmer, very gently, for 10 minutes. Stir in sugar; increase heat to high and boil vigorously until jam reaches setting point. (218 - 220F or 103 - 104C), 10 to 15 minutes, stirring frequently. Remove from heat, skim off foam and stir for 3 - 5 minutes to suspend fruit evenly throughout jam. Fill sterilized jars and seal. Makes about 4 pint jars or 8 - half pint jars.

I took away the suger and took some sweetner instead.All people that have eat this jam have liked it even they who can ear suger.I can give you a example;) A child that like cheese want my jam rather then the cheese

I have got this recepie from a friend (have diabetes) that live in USA.This can maybe be something for you for Thankgiving.If I had made this one I should take away the honey;)

Hidden Pumkin Pies

Ingredients:

1 1/2 c. solid-pack pumpkin

1 c. evaporated skimmed milk

1/2 c. cholesterol-free egg substitute or 2 eggs

1/4 c. sucralose-based sugar substitute or granulated sugar

1 t. pumpkin pie spice

1 1/4 t. vanilla, divided

3 egg whites

1/4 t. cream of tarter

1/3 c. honey

Instructions:

Preheat oven to 350 degrees F. Combine pumpkin, evaporated milk, egg
substitute, sugar substitute, pumpkin pie spice and 1 t. vanilla in
large bowl. Pour into 6 (6-oz) custard cups or 6 (3/4 c.) souffle
dishes. Place in shallow baking dish or pan. Pour boiling water around
custard cups to depth of 1 inch. Bake 25 mins.

Meanwhile, beat egg whites, cream of tarter and remaining 1/4 t. of
vanilla with electric mixer at high speed until soft peaks form.
Gradually add honey, beating until stiff peaks form. Spread egg white
over top of hot pumpkin pies. Return to oven and bake 15-16 minutes or
until tops of pies are golden brown. Let stand 10 minutes. Serve warm.
Makes 6 servings.

Dietary Exchanges: 2 starch, 1 lean meat

Nutrients per Serving: Cal. 148, Cal. from fat 10%, Total fat 2g, Sat.
fat 1g, Carb. 27g, Chol. 54mg, Fiber 2g, Protein 8g, Sodium 133mg.

Breakfast omelette

This omelette have I read is good after you have exersiced in the morning.I have tried it.It was better then I thought.I ate with a salad.

3 egg white
2 food spoon milk
2 food spoon water
30 gram oats
cinammon

Make the evening before you shall eat the omelette and during the night have it in the refrigerator

My husband and I have just recently been diagnosed with type 2 diabetes.Please pray for us.
This recipe is soo good I don't bake them often because it is hard to stop eating them.This oatmeal cookie is sugar-free."
INGREDIENTS:
1 1/2 cups rolled oats
2/3 cup butter, melted( I use Smart Balance)
4 egg whites
1 cup granulated artificial sweetener(I use Splenda)
1 1/2 cups all-purpose flour
1/2 teaspoon salt 2 teaspoons baking powder
1/2 cup milk(2% milk or skim milk)
1 teaspoon vanilla extract
1/2 cup raisins
1/2 cup chopped walnuts

DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
2. Stir together the oatmeal and margarine. Blend in the egg whites and sweetener. Stir together the flour, salt and baking powder; add to the mixture alternately with the milk and vanilla; stirring

between additions. Finally, stir in the raisins and walnuts.
3. Drop by teaspoonfuls 1 to 2 inches apart onto the prepared cookie sheets. Bake for 10 to 15 minutes in the preheated oven.

Grilled Veggies

Ingredients are limited by your imagination. Various combinations may take some experimentation, eg potatoes, carrots, broccoli are some veggies that will cook much slower than squash.

Slice your chosen veggies (hint: if you choose a slow cooking veggie, slice it very thin and pre cook in microwave)

Combine ingredients in a large bowl

Spray with fat free, no cal Pam

Season with(choose one :) ):
1) Salt and pepper (red or black)
2) Cajun Seasoning
3) Chicken & rib rub - use sparingly!
4) Anything else you might like

Place all this in a grilling wok - I found mine at Ace Hardware, of all places

Cook on grill over a heat between med and high

Stir often - especially if you use onions, as they burn more quickly than other veggies do

This dish warms up in the microwave very nicely

Since veggies are a free food on my diet I fix this dish often.:yum: :yum:
