What do waterbaths have to do with cheesecake? Or am I kinda slow?

you're not slow.

you put the cheesecakes into a waterbath (or have a container w/water in the oven when it's cooking) so that the top of the cake solidifies and keeps from cracking.

<whew> I thought I had spent too much time hiding out in my closet!!! I don't cook my cheesecake, so I guess it isn't really cheesecake, but a cheese dessert. It's good anyway. I did make a real cheesecake at Thanksgiving though. Went to Walmart at 5:00 on Wednesday evening, the day before to purchase a springform pan!!! That was scary!!!
