One might expect that sexually mature animals would be a better choice if it was expected that they would repopulate the Earth.

What they repopulated was the Biodiverse system that Noah and his family were a part of. The must have gotten the job done, because the animals we read about in our Bible are still around today. Science confirms that the plants and animals we read about in Scripture are indeed native to this part of the world. Looking at their DNA is a mystery to science how they happened to show up when and where they did. When you say that Noah's flood was a local flood then that establishes some perdictions, things that would show that the story is true or not. To date, science does not contradict the Bible. Rather time and again, science establishes the truth of the Bible. What is contradicted is man made opinions, man made doctrine, and man made interpretations. Science helps us to come to a better understanding of the Bible.
