If the Amorites were defeated in 1600 BC, how could the Israelites go to war with them? Didn't they enter Canaan around 1300 BC? (BTW, Pharaoh Merneptah waged war on the Israelites in Canaan in 1207 BC). And if the Jebusites were a subgroup of the Amorites, were they still around in 1003 BC for King David to defeat them?

Could it be that the Amorite dynasty was defeated by the Hittites, but they survived in smaller groups in Canaan, being partially defeated by the invading Israelites, and later being defeated by King David?

Or were the Amorites of the 17th century a different peoples from the Amorites of the 14th and 11th centuries BC?

It would require some serious research to answer this question. But what often happens with these dates on who was able to meet who, is that we draw conclusions based on the data we have. Archaeology is a constantly refined science. We might think a certain group of people lived during a particular time, until somebody does more digging and discovers that those people could have lived a few hundred years earlier or later than previously believed.

That would be my speculation on the question about Amorites. To answer for sure, you would need to consult different historians and archaeologists, or possibly sponsor somebody to do more digging in the Middle East.
