Just cos it says in the Bible we shouldn't eat split-hooved animals who do not chew the cud. See Deuteronemy or Leviticus.
Pork is not a healthy meat to eat, it can contain parasites that are unhealthy for human consumption. You must make sure the meat is well cooked before you try to eat it. This is often the case for shellfish as well, it can be dangerous to consume if certain preparation procedures are not closely observed.

This I think is a reason for why pork or shellfish were a good part of the law, it’s just dangerous to eat so it was just best to do without it. Not so much of a real problem any longer considering modern conveniences regarding preservation and preparation of such food. Personally I don’t care for pork and eat pork seldom, but shellfish is fantastic.

As for the law, the law is incredible, but in the new covenant it is written on the heart, not on stone. The old dispensation has passed and the new dispensation is currently at work in the heart of the child of God. The old covenant laws were there to bring in the new covenant grace and all its promises. Still, the law is an awesome work, but this work should be written on the inward parts of the heart so the fellowship with God can exist, not the law written on stone externally which repeatedly shows the failure of man to follow such a righteous law. It’s fulfilled through Christ.

Actually pork is generally safer than beef in the US because of the laws regarding its processing. It is flash frozen to -40f which will kill all known bacteria. It need to be cooked to a lower temperature than chicken to be safe (160f) which is the same as medium for cooking steaks. Modern pork has less fat per pound than beef for similar cuts. The modern pork industry and regulation makes it safer and even healthier than beef for those of us who worry about fat in our diets. I am not one of those folks but I know plenty who are. :)

I've debated the vegetarian thing many a time, seeing as how I feel very strong about the humane treatment of animals, but I just can't. God made me an omnivoure and an omnivoure I shall be! Personally, I like pork. And if you add barbque sauce to it....bliss! Not to mention bacon, which is one of the three reasons I could never go veggie. ;)

And if you notice in the rest of my post, I make mention of modern day preservation and preparation techniques make it less of a danger now than it used to be. There was no FDA back then to manage processing and storage of the product. Yet modern day techniques are not foolproof but they are far more consistent compared to millennia past. In context to my post, I’m simply stating the fact that pork is in truth a dangerous meat and it was no wonder it had a specific place in the law of the old covenant for the protection of the people.

As for cow meat which is a bit ot (but I didn‘t bring it up), if it’s so safe than why has Japan refused our beef for so many years until just recently? You just cant believe everything you hear out of the FDA, it’s just the science of the greenbacks driving them.

The NT is clear.

Matthew 15:11
What goes into a man's mouth does not make him 'unclean,' but what comes out of his mouth, that is what makes him 'unclean.' "
Mark 7:18
"Are you so dull?" he asked. "Don't you see that nothing that enters a man from the outside can make him 'unclean'?

Romans 14:14
As one who is in the Lord Jesus, I am fully convinced that no food is unclean in itself. But if anyone regards something as unclean, then for him it is unclean.
