Out of curiosity, I was wondering if there is a website or point of reference (other than the creeds) that give the statement of faith and doctrines that the Orthodox Church believes in and holds to? Also, if there is a resource that not only lists them, but also in depth explains them and gives support (either biblically or traditionally) for them? I have searched for myself, but I wanted to see directly what you guys cite and give, because you all would know much better than myself what an authoritative reference is and what isn't. I'm searching out deep theological teachings from the church, so anything that could be complex or otherwise, don't be afraid to throw my way.

Thanks in advance.

The Confession of Dositheus was written and approved by the Synod of Jerusalem in 1672 in answer to the protestant reformation (and some shenanigans that went along with it).

Note that this version of it was translated by a protestant who wasn't familiar with some of the terms it discusses. Also, where it references the Catholic Church, it means the Eastern Churches.

Certainly.
The statement of faith is the Nicene Creed, but since you are inquiring about more/other.. here's a few places with info.

GOARCH, Introduction to the Orthodox Church
This is the Greek Orthodox Archdiocese of the United States website.
I list this one first for two reasons, one I am a member of a Greek Orthodox parish and secondly, in the latter part of my searching I spent a lot of time on the GOARCH website.

You will find similar info on the other EO diocese sites such as this one:
The Orthodox Faith - Orthodox Church of America (OCA)
and this one
Discover Orthodoxy on Antiochian Orthodox Christian Archdiocese.
https://oca.org/orthodoxy/the-orthodox-faith
If you are real adventurous or looking for a launching pad for specific areas, you could search things out on the Orthodox Wikipedia pages.
https://oca.org/orthodoxy/the-orthodox-faith
I hope this helps.

There are a few catechisms too. The ones that come first to mind are St. Cyril's and St. Philaret of Moscow.

When I found something I wanted to read, I would usually ask here and make sure it was solid before investing myself in it (unless it came highly recommended by another trusted source).

Some points of theology you will find to be absolute and they should be the same everywhere. However there are some things with wider latitude of understanding where you might find a range of interpretations.

They will still support the overarching beliefs though.
