Praying to saints is really attributing some of the attributes of God to man. The question is have they been given to men>

if the only reason not to ask physically dead saints for their prayers is that their bodies are dead and in the grave, then there is no sin in asking Enoch and Elijah for their prayers?

The best reason for praying to each other humans would be if God is hard of hearing or some kind of meanie that will only act when Joe down the road or Joe passed on has prayed for you

If it is perfectly normal to talk to dead people, as Catholics claim, then why did Saul commit such a grave sin by doing just that?

First - did Jesus sin when he talked with the dead? After all - Scripture records that he talked with the spirits of two dead men on the mount of transfiguration . . .

Secondly - Saul used Satanic methods to contact Samuel. He went to a WITCH. Necromancy is a sin and the counterfeit of communion of saints.
