Actually they are both good. The NIV is more a direct translation, while the NLT is a paraphrase. I have a parallel Bible with both, side by side, of the KJV and NLT. I think an NIV - NLT may be available, but if not, the King James version is still very accurate and concise, and alongside the paraphrase helps a person gain insight into the meaning. Another good paraphrase and a favorite of mine is the Amplified Bible.
Here's the difference between the two you have mentioned:

Galatians 5:17 (NIV) For the sinful nature desires what is contrary to the Spirit, and the Spirit what is contrary to the sinful nature. They are in conflict with each other, so that you do not do what you want.

Galatians 5:17 (NLT) The old sinful nature loves to do evil, which is just opposite from what the Holy Spirit wants. And the Spirit gives us desires that are opposite from what the sinful nature desires. These two forces are constantly fighting each other, and your choices are never free from this conflict.

Even though I'm partial to the KJV... I agree that the NIV is good for gifts, easier to read and a solid translation. Have you thought about also getting a Naves Topical Bible, a Ryrie Study Bible or Crisswell Study Bible? These are reall good for people wanting to look into things more deeply.
