Phyiscally the canue is now (or one day, depending on how long after the canue is made we are discussing this); the wood that made the canue is 1000 years old.

Well no... even if I were to accept this idea that it has two ages, which I don't,
the canoe would be "now", and physically 14 billion years old (or however old you accept the universe to be) as that's how old the constituent parts are. Choosing the age of one specific configuration of those atoms is arbitrary.

(Besides, since you hollowed it out, most of the 1000 year old wood is gone. The rest is varying ages less than 1000 years.)

How old is the canoe when I'm finished?

One can safely assume by looking at the weathering, the sawmarks, the type of paint of that the canoe has been built recently. Maybe if you look closely you will discover an accidental drop of blood from the guy who made it and tell that it has been deposited recently. You can also look at the wood and determine aproximatly the age of the tree and assume that it came from a seed about 1000 years ago.

The tree stop being a tree at the moment you call it a canoe.

I remeber when I were on rehabilitation and therpy for my devlopmental disorder. I Remeber how I percived time diffrently then? Long days and a longing for my home!
Did you ever long for Long and McQuade's on one of those long days while longing for home?
