I was responding on the "No meat on Friday" thread when the inspiration to start a new thread hit me :idea: !

We are really broke and eat mostly meatless food, so it is not really a big deal to me to not eat meat on Friday. I was typing a list of ideas and wondered if anybody wanted to share easy recipies for meatless meals for Lent??



Here's on from me:
-
Cheese and onion enchiladas
375 degrees for 30 minutes uncovered
13x9x2 coated with cooking spray

12 corn tortillas
2 cans of enchilada sauce (Old El Paso, or Ortega)
1 bag of shredded cheddar cheese
1 onion diced (use however much ya' like)

-pre heat oven &prepare pan for baking
-pour 1 can of suace into a bowl
-mix cheese and onion together(you can put the onion in the bag and shake it)
-microwave a stack of 6 tortillas placed between two damp paper towels and moicrowave for 1 min.(Repeat with the second set of tortillas)
-dip warm tortilla in the bowl of sauce, lightly coat both sides
-fill tortilla with cheese mixture
-roll up and place in pan seam side down
-dump other can of suace evenly on the enchiladas, once they're all in the pan
- bake @ 375 degrees for 30 minutes

Serve with chopped tomato, lettuse and sour cream, if desired.

I also usually make some rice as a side dish (all of my kids will at least eat the rice!)

and cauliflower cheese...you eat that in the U.S, right?

Serves 4

Cauliflower - 1 large, trimmed
Milk - 300 ml (½ pint)
Plain flour - 3 tbsp
Butter - 50g (2 oz)
Cheddar cheese - 100g (3½ oz), grated
Salt and black pepper
Mustard powder - pinch
Grated nutmeg - pinch
Fresh breadcrumbs - 25g (1 oz)


METHOD

  1. Cook the cauliflower in boiling salted water for 10-15 minutes until tender. Drain and place in a flameproof dish.
  2. Meanwhile, place the milk, flour and butter in a saucepan. Heat, stirring continuously until the sauce thickens, boils and is smooth. Cook for a further 2 minutes.
  3. Add about three-quarters of the grated cheese to the sauce. Season with salt and pepper to taste. Add the mustard and nutmeg. Stir and cook for another minute.
  4. Pour the sauce over the cauliflower. Mix the remaining cheese and breadcrumbs together, sprinkle over the sauce. Grill until golden. Serve immediately.

Italian Pasta Stir fry

1 pkg (8 oz) linguine, uncooked

1 Tablespoon olive oil

2 large garlic cloves, pressed

1 medium zucchini, sliced

1 medium onion, chopped

2 medium tomatoes, seeded and chopped

1/4 cup snipped fresh parsley

1 teaspoon dried basil leaves

1 teaspoon dried oregano leaves

1/8 teaspoon salt

1/8 teaspoon ground black pepper

1/4 cup (1 oz) grated parmesan cheese. I might use shredded since I have some left from the other night.


Cook pasta according to pkg directions; drain and keep warm. In wok or deep-sided12 inch skillet, heat oil. Add garlic; stir fry15 seconds. Add zucchini and onion; stir fry 2-3 minutes or until crisp-tender. Add tomatoes, parsley, basil oregano, salt and pepper. Gently cook and stir 1-2 minutes or until thoroughly heated . Remove from heat; stir in pasta. Sprikle with cheese; serve immediately.

They are Orthodox though, so you won't find any butter, milk or cheese in the recipes.
Many Thai recipes are meatless and delicious (especially if you like hot, spicy food :yum:)

Chunky Vegetable Chili

2 tbsp oil
2 cups onion diced
56 oz diced tomatoes
2 cans whole kernel corn drained
4tsp chili powerder
4tsp ground cumin
3 tsp salt
30 oz pinto beans, drained
2 red bell peppers diced
4 small or 2 large zucchini sliced or diced
1 1/2 cups picante sauce

Saute onion in oil. Add tomatoes, picante sauce, chili powder, cumin and salt. Cover and simmer 10 minutes. Add beans, red pepper, zucchini, and corn. Cover and simmer until vegetables are tender, about 10 -15 minutes. Serve with cornbread.

Title: Broccoli Lasagna

Yield: 8 Servings

1/3 c Flour
3 1/2 c Milk
pn Nutmeg
1 ts Salt
1/4 ts Pepper
1/4 c Grated Parmesan

1 lb Lasagna noodles; cooked
1 lb Broccoli; thawed and
.. chopped
2 c Shredded Swiss cheese

Combine flour and 1/2 cup milk until smooth. Add
remaining milk and bring to a boil. Cook until
thickened, about 1 minute. Take off heat; stir in
nutmeg, salt, pepper, Parmesan and hot pepper
sauce. Set aside 1 cup for topping.

Put 2 layers of noodles in bottom of 13X9X2"
baking dish. Cover with half the broccoli, 3/4 cup
Swiss cheese, and half the white sauce. Repeat.
Top with a single layer of noodles and reserved
white sauce. Sprinkle with remaining Swiss cheese.

Bake at 350°. 35 minutes. Let cool 15 minutes
before serving.

I work in a pizza place. We make a vegetarian pizza. It has the tomato sauce, broccoli, cauliflower, tomatoes, onions, pizza and cheddar cheeses on it.

Another one that I make is with tomatoes, onions, green peppers, mushrooms, and black olives. (and cheese, of course):yum:

We have grilled cheese every other Friday! Yummy! The other Fridays we have fish (since we have little kids our menu stays the same every week).

Anyone who lives where it is warm enough to grill here are some easy grill tacos-

corn tortillas
can refried beans
shredded cheddar cheese (8oz- or more if you like)

start the grill
spray grill rack with cooking spray
put grill rack on grill to preheat
warm tortillas in microwave to make soft
fill warm tortillas with beans and cheese
press firmly to keep 'em folded
spray the tacos with cooking spray
lay folded tacos on the grill
grill about 5 min each side, or until crisp

serve with salsa.

These are super yummy! And good with grilled corn on the cob!
