I was responding on the "No meat on Friday" thread when the inspiration to start a new thread hit me

We are really broke and eat mostly meatless food, so it is not really a big deal to me to not eat meat on Friday. I was typing a list of ideas and wondered if anybody wanted to share easy recipies for meatless meals for Lent??
Here's on from me:

Cheese and onion enchiladas
375 degrees for 30 minutes uncovered
13x9x2 coated with cooking spray
12 corn tortillas
2 cans of enchilada sauce (Old El Paso, or Ortega)
1 bag of shredded cheddar cheese
1 onion diced (use however much ya' like)
-pre heat oven &prepare pan for baking
-pour 1 can of suace into a bowl
-mix cheese and onion together(you can put the onion in the bag and shake it)
-microwave a stack of 6 tortillas placed between two damp paper towels and moicrowave for 1 min.(Repeat with the second set of tortillas)
-dip warm tortilla in the bowl of sauce, lightly coat both sides
-fill tortilla with cheese mixture
-roll up and place in pan seam side down
-dump other can of suace evenly on the enchiladas, once they're all in the pan
- bake @ 375 degrees for 30 minutes
Serve with chopped tomato, lettuse and sour cream, if desired.
I also usually make some rice as a side dish (all of my kids will at least eat the rice!)
