Most things have limits. Heat limit, cold limit, energy limit. limit to how much DNA can change and still have a viable organism.

Why does the linearity of a function have anything to do with its reliability? Population growths are usually non-linear and yet they describe accurately what happens in nature. Why does the rate at which evolution takes place have to be a linear function?

Well you are right to some extend. There are some limits in what evolution can do but it won't bring evolution to an actual end. As long as there is reproduction there will be evolution and there is no end goal evolution tries to reach.
