IntroductionA delicious and flavourful soupIngredients1 head broccoli
1 medium onion
1 spring onion
1 tablespoon vegetable oil
750ml vegetable stock or bouillion
1 teaspoon garlic powder
1 teaspoon mustard powder
2 bay leaves
150ml heavy cream
150 grams Stilton or blue cheese
salt and pepperDirections1. Finely chop onion and spring onion and gently brown in large pot with oil.

2.Chop whole broccoli into chunks, and add to pot along with vegetable stock, garlic powder, mustard powder, and bay leaves.

3. Bring to boil, and then lower heat and simmer for 25 minutes.

4. Remove bay leaves

5. Cut cheese into small chunks and add to pot along with the cream.

7. Blend thoroughly with hand blender, or in smaller loads in a kitchen blender.

8. Season to taste with salt and pepper

9. Reheat on low if necessary
Nutrition InformationI don't know the exact carb content, but it should be very low

It does serve for 6 but you can change the amount of ingrediants if you'd like,


2 med onions, chopped very fine
1/4 cup butter
1/2 cup flour
1 can clear chicken broth
1 lg can evaporated milk
1 1/2 cup water
1/2 tsp thyme
2 bay leaves
1/2 tsp salt

Saute onions in butter until tender. Mix flour and chicken broth and add to onion mixture. Add milk, water, and other ingredients. Cook slowly for 20 minutes.

Broccoli Cheese Soup

4 cups chicken broth
1 cup water
1 cup half-and-half
4 slices processed American cheese (like Kraft)
1/2 cup flour
1/2 teaspoon dried onion flakes
1/4 teaspoon black pepper
4 1/2 cups broccoli florets, cut to bite size pieces



Combine Chicken broth, water, half and half, cheese, flour, onion and pepper in a large soup pot.

Bring to a boil, stirring constantly, then reduce to a simmer.

Add broccoli and simmer for 15 minutes more or until broccoli is tender but not mushy.

Pour into a large soup bowl and offer cheese and parsley at the table.

its the only name I know - it was my grandma's soup!

go to the meat department of your store and buy several knuckle bones (They usually come one or two to a package) or some bones with a little meat on them (the butcher would know)

Boil for around 3 hours to get all the flavor out of the bones
then add:
A large pot so you can 3/4 fill the pot with water or at least to cover the bones.
1 can stewed tomatoes
1 onion (diced)
cappelini noodles ( they are a very fine spaghetti type in a coil)

cook about 1 hour

also add
Salt
pepper
garlic salt
Italian seasoning
and whatever other spices you want

also have on hand lots and lots of buttered garlic french bread!


I dont know the amounts - got the ingrediants from different ones in the family (cant ask grandma - she passed away 12 yrs ago :( )

7 Day Diet Soup

3 cups crushed plum tomatoes
2 1/2 cups pasta sauce
1/2 cup tomato paste - 1 small can
6 green onions
2 cups beef broth
1 bunch celery & tops
2 cups fresh green beans
2 green bell peppers
2 lbs carrots
2 tablespoons chili powder
1 tablespoon coarse salt
2 tablespoons paprika
1/8 teaspoon cayenne pepper
2 tablespoons prepared mustard
1 teaspoon ground black pepper

In a very large stock pot, combine tomatoes, pasta sauce, tomato paste and beef broth.

Over med/high heat, bring mixture to a boil.

Reduce heat and simmer covered for 15 minutes.

Wash and rough chop carrots, celery including tops, and green peppers into 1 inch cubes.

Wash, trim and cut green beans into 1 inch lengths.

Chop green onion into 1/4 inch lengths.

Add all vegetables to simmering pot.

Stir to combine.

Add chili powder, cayenne, mustard, salt, black pepper and paprika to soup mixture.

Stir and simmer on low for 60 - 90 minutes.

Soup Diet Day 1.

Eat as much of any fruit you want EXCEPT BANANAS.

Eat only soup and fruit today but eat all you want

Day 2.

All Veggies.

Fill up on fresh vegetables like salads etc.

Eat all the soup you want and have a large baked potato with butter at dinner time.

But NO FRUIT TODAY.

Day 3.

Eat all the soup, fruit and veggies you want, but NO POTATOES.

If you haven't cheated you will have lost 5-7 lbs by tomorrow morning.


Day 4.

Bananas and skim milk.

Eat at least 3 bananas and all the milk you want today.

Remember, you can have soup anytime you want.


Day 5.

Beef and Tomatoes.

You can have up to 20 ounces of beef and 6 tomatoes in any style you like.

Remember to eat soup too.


Day 6.

Beef and Vegetables.

Eat all the beef and veggies you want today.

You can have 2-3 steaks if you want, with green leafy vegetables.

But NO POTATOES.

Don't forget to have soup, have as much as you want.


Day 7.

Brown rice, unsweetened fruit juice, and veggies today.

Eat all you want whenever you want and have soup as often as you can.

The soup is the key

Strachan Broccoli Soup


The credit for this delicious soup goes to my daughter's MIL. Makes a wonderful lunch with
fresh yeast rolls.

Prep Time: 15 minutes
Cook Time: 15
Ready In: 30 minutes
Yields: 6 servings

INGREDIENTS:
1 (49 1/2 oz) can chicken broth
32 oz. fresh or frozen broccoli
16 oz. cream cheese
salt and pepper to taste (optional)

DIRECTIONS:
1. Simmer the broth and broccoli in a large pan until the broccoli is tender.
Using a blender with the top slightly ajar, and working in batches, puree the
broccoli, cream cheese, and enough broth to liquify. Return all the puree to the
remaining broth, stir well and heat through. Ladle into bowls or mugs and enjoy!
Salt and pepper to taste.
