If I may, try this the next time you're feeling Eastern-y:
Get a wok (or a pan, I guess) brown some bite sized pieces of chicken (make sure to cut away the fat first) simmer the chicken in some coconut milk, and stir in a few tablespoons of curry paste until blended. Let it simmer until the chicken is thoroughly cooked and then throw it over some jasmine rice, sauce in all. (though basmati works as well).
It's a sort of Thai-Indian twist, and happens to be my favorite ever.

Edited to comment on nuts: Okay. That changes the dynamics, but only slightly. One dish I had in mind uses peanuts as a finishing garnish, but you can take them or leave them. I'll double check some things to make sure, but I think we're good.
