Observed speciations do because all have occurred over just a few years. We simply haven't been observing with a focus on evolution long enough to offer you what you suggest doesn't happen. If you'd like to pull up a chair and get comfortable for a few hundred thousand years, you'll have the evidence necessary to realize how wrong you are.
