I know theists assume their god is good, wrote/directly influenced the bible, talks to you, etc., but how would you know if your god was either evil or a trickster and lying?

Because I know His voice. He is my Shepherd and I am one of His sheep.

I know He is not evil, I know He is not a trickster, I know He is not a liar because I know He is God and He cannot lie. He is the very source of all that is Good, Just, Pure, Holy, Righteous. He is the very locus of Goodness and Goodness personified.

I, like Frederick Faber, have been in the presence of the Almighty and have there tasted and seen and felt the love of God....Faber writes in jubilant rejoicing of Christ....

I guess the answer hinges on what it means to 'know' something. The only place this can go is into the realm of neurobiology and philosophy of neurobiology.

Actually, those assumptions would be about Christians, not necessarily all people who believe in god or gods.
Historically, some religions have believed in evil gods as well as good gods.
It just depends on the religion.
What you are really asking, is how Christians know if their God is good or evil or lying to them.
And, it depends on your definition of "good" and who God is good to.
The Christian God is good to the good/Christian people and can allow or cause evil to happen to the bad guys (who of course are not Christian - even if they claim to be they must not really be Christians be if they are bad guys.)
