If the atmosphere supposedly follows the same proportion as the surface of the earth how is that possible?

That's true, where there are things preventing you from seeing very far. But when you climb to the top of a mountain, and do a 360, it's immediately clear that there's a limit to how much ground you can see in any direction. This is the horizon, and it exists because you see in a straight line and the spherical Earth bends away from your line of sight. A flat Earth would not have a horizon.

You didn't answer the horizon question. Why can't I see for thousands of miles from the top of a mountain?

How come when you're on a boat a long way out approaching a coastline, the first thing you see is the tops of hills, then as you get closer you can see more of the hills, then eventually when you're close enough you can see the actual shoreline? A spherical Earth explains all these things - how do you explain them?

Exactly, thats a pretty good comparison.

Except a lot more stretched out ( longer and wider than it is tall )

This is confirmed in the bible, Genesis chapter 1, the firmament.
