It reads to me to be a wittness of God's grace, rather than a absolute statement on faith.

You are missing the context of the passage in Malachi.
God actually blessed the Edomites with prosperity but ultimately had chosen Jacob for the blessing.

It is a literary structure that takes some understanding of Bible history, and logic.
For example the context would be the same for every man of God that God had chosen for his commission.
King David above all men was chosen to be king over Israel.
You could say David God has loved but all else He has hated.

Malachi 1:2-3
2 I have loved you, saith the Lord. Yet ye say, Wherein hast thou loved us? Was not Esau Jacob's brother? saith the Lord: yet I loved Jacob,
3 And I hated Esau, and laid his mountains and his heritage waste for the dragons of the wilderness.

God hated esau whom God calls a brother of Jacob. God doesn't say He hated edomites but rather Esau, the brother of Jacob.
