Its like this. you get data together, then look for a way to explain it.
That is common enough in daily life. Science proceeds by developing theories and then trying to falsify them. If you cant falisfy it, well, its a pretty good theory. In many years and many tries, nobody has had any luck at all trying to disprove evoluution. It should be easy, if it is false, there should be mountains of proof.
Disproving god is quite different. So is proving god. There is no way to apply any data to it.
When you talk about how its impossible to prove evolution you are really just showing that you dont know enough about science to make a meaningful comment.

My analogy would be a parent with a surveillance video catches the kid with his hand in the cookie jar, so to speak.
When confronted with did you do it? he might provide any number of plausible explanations but the video trumps them all. Parent can listen with amused patience while the most wonderfully complex and convincing story is told... stuff they might well believe if they didnt have the Proof.
