Anyone got simple garlic infused recipes?! Mmmmmm ...I love garlic!

Garlic Wedges
  • Prepare and slice up a whole garlic
  • Tip into 500ml of Olive Oil - shake it about, let is marinade overnight
  • Get some spuds, slice into 6 fat wedges each
  • Smother wedges in Garlic Olive Oil made previously
  • Throw them on a tray, sprinkle with salt
  • Pop in an oven (middle shelf) for around 20 mins on 180 DegC
  • Enjoy! :)

Here`s a little play on that. Next time you bake a potato, slice two lines through not quite to the bottom. Open these two parts and stuff them with slivers of garlic, onion, and a pat of butter. Roll them up in tin foil, don`t worry if the stuff pushes out, push it in the best you can. Then bake as you would a potato. Grill is awesome too!!!

Veggie Delight on Garlic Toast


Veggie Delight


You'll Need:
1/8 cup olive oil
1 clove garlic chopped
1 medium eggplant cubed
1 zucchini cubed
1 medium tomato - peeled, seeded and chopped
1 teaspoon salt
2 teaspoons minced fresh oregano
2 teaspoons minced fresh basil (optional)

1 Place olive oil and garlic in a large skillet. Fry (stirring occasionally) over a medium heat until the garlic is golden brown; approximately 2 minutes.

2 Add eggplant and zucchini to the skillet, fry until the eggplant is brown and tender; approximately 5 to 7 minutes.

3 Add the tomato chunks to the skillet, stir the mixture until the tomato becomes a pulp. Mix in salt, oregano, and basil. Stir the entire mixture over the heat for 2 minutes, then remove pan from heat and let the mixture cool.


Garlic Toast


1 cup butter softened
1 tablespoon minced garlic
1/4 cup grated Parmesan cheese
1 tablespoon garlic salt
1 teaspoon Italian seasoning
1/2 teaspoon ground black pepper
1/4 teaspoon ground paprika

1 French baguette



4Preheat oven to 325 degrees F (165 degrees C).


5 In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with garlic salt, Italian seasoning, pepper and paprika. Mix until smooth.

6 Slice the bread into 12 (1-inch thick) slices. Distribute garlic butter evenly over the top of each slice. Place the slices directly onto the oven rack (do not use a cookie sheet, the bread will get crisper this way). Let the bread heat for 3 to 5 minutes.

7 Remove the bread from the oven and arrange them on a serving platter. Spread the vegetable mixture over the 12 bread slices, distribute the topping as evenly as you can. Serve immediately.

No dessert recipes, but did you notice the omelette and frittata ideas I added to the egg & potato thread? I throw some minced garlic into the butter or olive oil before adding other ingredients just about every time I saute or stir-fry something. If you bake potatoes in the microwave until they are almost done before frying them (either for hashbrowns or to put in an egg dish) they absorb a lot of buttery garlicky flavor. :yum:

Roasted Garlic and Mustard Vinaigrette: To roast garlic, place the entire head in an oven (425F./220C.) and bake it for 20 to 30 minutes. Squeeze the roasted garlic from the papery husks. ( Be careful, don't burn your fingers);
Ok, you will need:
Garlic Roasted and puree'd, to taste
Salt to taste
Dijon Mustard to taste
Black pepper, fresh ground, to taste
Cider Vinegar 16 fluid ounces
Vegtable oil 8 to 16 fluid ounces
Preperation:
Combine the garlic and salt; work them into a paste.
Combine the garlic mixture with the mustard, pepper, and vinegar.
Gradually incorporate the oil in a thin stream, mixing thoroughly. Adjust the seasonings as needed.
Serve the vinaigrette immediately or store it under refrigeration for later.
