This is good comfort food:)



Chicken & Corn Stew

1 tbs vegetable oil
2 whole boneless chicken breasts
1 tbs unsalted butter
1 small onion chopped fine
1 small bell pepper chopped fine
4 tomatoes chopped
3 tbs flour
1 1/4 cups chicken broth
1 cup corn
1 tsp chili powder
Salt & pepper to taste
1/4 cup fresh basil chopped fine
1 rib celery chopped fine


Method
Pat the chicken breasts so that they're dry and season with salt and pepper.

In a skillet heat the oil over moderately high heat until hot but not smoking. Cook the chicken until browned on all sides and then set aside in a bowl.

To the fat remaining add the butter and flour. Stir in the onion, the pepper and the celery and cook until the vegetables are softened, stirring occasionally.

Add the broth, tomatoes, chili powder and chicken along with any juices that have accumulated in the bowl. Simmer the stew covered for 15 to 20 minutes or until the chicken is cooked through. Stir in the corn.

Transfer the chicken to a work surface and let it cool until it can be handled. Cut the chicken into bite size pieces and stir it back into the stew.

Stir in the basil and season with salt and pepper.

This is a fattening,time-consuming but worth the effort version of a classic comfort food:)

Apple White Cheddar and Gruyere Macaroni & Cheese

Ingredients:
6 slices French bread
6 tablespoon unsalted butter
2 cups milk
1 1/4 cups heavy cream
3/4 cups apple cider
6 tablespoons flour
2 tablespoons plus 1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon nutmeg
1/4 teaspoon cayenne pepper
1 tablespoon Dijon mustard
3 1/2 cups sharp white cheddar
1 cup Gruyere cheese
4 cups medium shell pasta
3-4 quarts water for pasta

Preparation:
Heat oven to 375°. Butter a 13 by 9 inch or 3 quart casserole dish. Remove crust from bread, cut into 1/2 inch cubes, and place in bowl. Melt 2 tablespoons butter over medium heat. Pour melted butter over bread and toss to coat. Put bread cubes into a food processor and process until fine crumbs form. Set bread crumbs aside.

In a medium saucepan over medium heat, heat milk, cream and apple cider until hot.

While milk mixture is heating, melt remaining 4 tablespoons butter in a large high-sided skillet over medium heat. When butter is melted and bubbling, add flour. Cook stirring for 1 minute.

Pour hot milk mixture slowly into skillet with flour-butter mixture whisking constantly. Continue cooking and whisking over medium heat until sauce bubbles and becomes thick.

Remove from heat and stir in 1/2 teaspoon salt, pepper, nutmeg, cayenne pepper, mustard, 2 1/2 cups cheddar and 1/2 cup gruyere. Combine and set aside.

Fill a large saucepan with 3 to 4 quarts of water add remaining 2 tablespoons salt and bring to boil. Add pasta and cook slightly less than what the package calls for. Pasta should be slightly underdone. Pour pasta into colander and rinse under cold water draining well.

Stir pasta into cheese sauce and transfer to prepared casserole dish. Sprinkle remaining 1 1/2 cups cheese over pasta and spread bread crumbs on top to cover. Bake for about 30 minutes or until golden brown on top.

My mother's homemade chicken and noodles, with the big fat homemade noodles my wife and kids won't go for. Now when I make it, I have to cut the noodles really skinny. It's just not the same.

And Friendship cake, for an apple pie recipe:

3 lbs apples, peeled, cored and thinly sliced
3/4 cup sugar
2 TBSP flour
1/4 tsp salt
1 TBSP cinnamon
(toss and set aside)

crust
1 1/2 cups flour
3/4 tsp salt
1/2 cup plus 1 TBSP vegetable shortening
3 TBSP ICE water (it's important for the flaky crust)
(Cut together first three ingredients until the consistency of a coarse meal. Add the ICE water one TBSP at a time, working the dough as little as possible. Roll out on cool floured surface to size for a nine-inch pie pan. Carefully lay the crust in the pan, easing it into the sides all the way to the bottom. Flute the edges. Spoon in the apple mixture and arrange the slices to fill in any voids.)

Topping
1 cup flour
1/2 cup butter or margarine (not 43% vegetable oil spread; it doesn't work well in this)
1/2 cup brown sugar
(Cut topping ingredients together to a fine mealy consistency and sprinkle generously onto the pie, thoroughly covering the apples)
Using a drip pan, bake 15 min. at 425 degrees F, decrease heat and bake 45 minutes at 375 degrees F.

I've won awards with this recipe. Enjoy.

Comfort soup is my favorite:

Comfort Soup

Per serving:
1 large potato unpeeled, cut in ½ inch cubes
3 tablespoons coarsely chopped onions
2 inch piece smoked sausage coarsely chopped
1 tablespoon butter
3 sprigs fresh parsley or ¼ teaspoon dry parsley
1 sprig celery leaves, chopped
1 stalk celery coarsely chopped
1 cup whole milk
1 cup carrot broth
½ cup mashed carrots
salt and pepper to taste

Boil carrots until tender, drain, and reserve the cooking water. Boil potatoes, onion, parsley, celery together in carrot broth (water leftover from boiling carrots). Just before potatoes are tender, drain ½ of the broth, add the milk which has been pre-warmed in the microwave for 30 seconds, celery leaves, sausage and butter.

Heat and stir until butter is melted and blended in.

Stir in the mashed carrots, cover and simmer until potatoes are tender to the fork. Add salt and pepper to taste.

Oven Browned Beef Stew

2-3 lbs stew meat, I buy a roast & cut it myself
2 large onions, halved & then sliced
6 or so potatoes, cubed
carrots, sliced or chopped, I use the "baby" carrots, until it looks like enough
3 stalks of celery, sliced or chopped, or I just use celery salt if I don't have celery
1 small (8 oz) can of tomato sauce
1 TBSP sugar
flour
salt
pepper
1 cup of water

Spray a large ovenproof dutch oven with oil & place meat in the bottom. Sprinkle with flour, salt, pepper & stir to coat. Add vegetables in order, salting & peppering each layer. If I am using celery salt in place of celery, I omit the regular salt. Mix tomato sauce, water, sugar (to taste), & 2 tsp flour. Pour over top & add additional water to come almost to the top of the veggies. Do not stir. Cover & bake at 300* for 3 hours. Check periodically to see if needs more water. Do not stir. I usually bake this at a higher temp for a shorter time. When you take it out to check to see if it needs more water, just check the veggies to see if they are done. When done, stir & serve with biscuits.
This is great! I've had it twice since you've posted it. We tweaked it a little to suit our tastes, more meat, less potatoes....and cooked it in the crock pot on low for hours and hours. Homemade buttermilk biscuits were perfect with it.

Swiss chard with carmelized onions is delicious and a great way to get greens in your diet.

After you've carmelized your onions, or sauteed them in white wine, add the swiss chard. Cook till wilted.

Leftovers are great for quiche or omlettes.

I've enjoyed cooking with the season, pumpkin dishes galore!

I like Mexican foods. The spices warm you in the cold winter months. It is a good time to use the cayenne pepper!

Boil diced potatoes with sliced/diced onion until potatoes are tender. I used about 6 to 8 Yukon Gold potatoes. Drain. Return potatoes to pan & add butter & sour cream to taste. I'm not a real big butter fan, so I didn't use much & I used about 1 1/2 cups of fat free sour cream. Add milk to desired consistancy. I used skim milk. Add salt & pepper to taste. This soup is also better the next day(I took the leftovers in my lunch), but then so are alot of wintertime or comfort food dishes. Could probably be served with cheese &/or bacon sprinkled on top.

  2. Bake in a preheated 400 degree F (205 degrees C) oven 15 minutes.
  3. Reduce temperature to 350 degrees F (175 degrees C) and bake 30 minutes more. Remove pie from oven. Increase temperature to 400 degree F (205 degrees C).
  4. Prepare cinnamon topping and sprinkle over pie. Return to oven and bake 10 minutes more. Cool on rack.
  5. To Make Cinnamon Topping: Combine 1/3 cup sugar, 1/3 cup flour and 1 teaspoon ground cinnamon in bowl. Cut in 2 tablespoons butter or regular margarine until crumbly, using a pastry blender

my 6 year old grandson just loves apple pie ,actually anything with apples , he can eat a whole bag of apples in one afternoon ( an apple a day keeps the Dr. away, I keep saying )

I really like bean soup when it is cold and blustry out. You can make it in the crockpot so it slow cooks all day.

1 bag 13 bean soup mix
1 ring beef smoked sausage cut into slices or 1 pound chunked ham
1 large onion chopped
2 ribs celery sliced
1 can tomato paste
salt and pepper to taste

Rinse and sort beans and put into crock pot. Add all other ingredients except tomato paste and add enough water to cover at least 3 inches over the beans. Turn crock pot on high and let soup cook. Check occasionally to see if there is enough water covering beans. When the beans are tender add the can of tomato paste and stir through soup. Add water if needed. Let come to a boil again and it's ready to serve.

I usually make corn muffins to go with this.

I can remember growing up my grandmother would make a big pot of veggie beef soup the Friday following Thanksgiving. She would let it cook, while we went shopping to get Christmas decorations, etc. When we came back, she would make a pan of cornbread. We'd get everything unloaded, including the stored decorations. Then we'd eat. I never ate the cornbread with the soup. I always had my seperate with some butter. Yum. Then we'd get to decorate her house and our house the whole weekend with the Christmas music cranked up. She and I would unpack the ornaments. There were several in there that were my grandfather's when he was a child. She'd pull them out one by one and tell me about them. We'd decorate her house on Friday and then move on to our house on Saturday. We'd eat off the pot of soup for three days! Nobody complained b/c it was good stuff! For dessert, we always had apple pie, buttermilk or pecan pie. Mmm. I miss those days, my grandmother especially.

Get a loaf of frozen bread dough and let it thaw.

Let it rise and then knead it once. Put in a olive oil coated bowl and cover with a cloth to rise. When it is risen, punch it down and shape it into a log. Cut it into 8 equal pieces and place them on an oiled baking sheet. Form each one into a disk about 8 inches in diameter.

Put 1/2 cup of one of the mixtures below into the center of each disk and fold the disk in half. Seal the edges by moistening one side and pressing them together, then drawing the bottom edge up and over the top edge and pressing them together to make a tight seal. Make two cuts in the top to allow steam to escape. Let rise 1 hour or until double in size.

While rising, place an oven-proof bowl full of water into the oven and preheat oven to 400 degrees. Don't open the door while preheating so that a little steam builds up inside the oven.

When rising is done, quickly open oven door and place baking sheet on the middle rack; close door as quickly as you can so all the steam doesn't escape. Set timer for 20 minutes and leave oven door closed!

After 20 minutes, use oven light to check on the progress of the baking. If the puffs are fluffy and begining to brown, open the oven and check the bottoms of the pastries; if the are slightly brown and firm, turn off the oven. If the bottoms are still raw looking, close door and set timer to check them in 10 more minutes.

Wair 5 minutes after you turn the oven off before you remove the pastries. Allow to cool slightly, then serve warm.

Fllings:

Sauted Italian greens (romaine, raddichio, endive, etc)

Shredded provolone, mozzerella, cheddar and parmesan

Ham, cheese and frozen or fresh peas.

Coarsely chopped fresh or canned fruits.

These all make an excellent main course!
