This is good comfort food
Chicken & Corn Stew
1 tbs vegetable oil
2 whole boneless chicken breasts
1 tbs unsalted butter
1 small onion chopped fine
1 small bell pepper chopped fine
4 tomatoes chopped
3 tbs flour
1 1/4 cups chicken broth
1 cup corn
1 tsp chili powder
Salt & pepper to taste
1/4 cup fresh basil chopped fine
1 rib celery chopped fine
Method
Pat the chicken breasts so that they're dry and season with salt and pepper.
In a skillet heat the oil over moderately high heat until hot but not smoking. Cook the chicken until browned on all sides and then set aside in a bowl.
To the fat remaining add the butter and flour. Stir in the onion, the pepper and the celery and cook until the vegetables are softened, stirring occasionally.
Add the broth, tomatoes, chili powder and chicken along with any juices that have accumulated in the bowl. Simmer the stew covered for 15 to 20 minutes or until the chicken is cooked through. Stir in the corn.
Transfer the chicken to a work surface and let it cool until it can be handled. Cut the chicken into bite size pieces and stir it back into the stew.
Stir in the basil and season with salt and pepper.
