Cowboy Bebop definitely has a great soundtrack.
As far as anime goes, I have to go with FLCL. The Pillows are magic.

Garden State for sure. I like everything but the crooner song. Plus Coldplay and Simon & Garfunkel is on it. :)

Ooooh and I love the Prince of Egypt music! "Look at your life through heaven's eyes!" Love that song. I saw someone mentioned that one.
