Turkey stuffing, macaroni and cheese,

sliced sugared apple sprinkled with cinnamon,nutmeg ,allspice , cloves and butter put in microwave and cooked for 3 minutes

I gotta stop I’m getting hungry

to make Mac and cheese in the microwave you do have to boil the macaroni in salted water first . Drain. And set aside. In a corning ware pan put butter and flour and fry the flour until it’s bubbling . Pour the milk in and add cut up cheese cubes . Heat and stir until the cheese melts and it thickens. ( you can do this in the microwave but you have to watch it, ) salt and pepper to taste . Add the cooked macaroni and stir until coated . Add extra cheese to the top if you want. Put in microwave and cook until it sets .

In the past week I have undertaken a new initiative with my diet and exercise including a pkg which should arrive any day of my first of *** Oil and ***** Powder (my Cardiologist recommenced it last week.) So this is probably the last opportunity I'll have to discuss this for a while, permanently, I hope. I am sorry for deleting the names but these may not be appropriate for you as they have side effects and drug interaction considerations and should only be taken if prescribed for you by a doctor, may cause GI problems, too. I have a life-threatening condition aggravated by body fat in the chest and so the risk of taking these FOR ME is acceptable.

Keep in mind that I am on a very strict diet to start with (Sat Fat, Cholest, Salt.) So I am REALLY splurging with some of the following.

Black, NON-greasy, (NOT Twizzlers) licorice (Red Vine or that Australian brand,) cashews, I cannot remember name but those foil-wrapped, square chocolate-covered ice cream or mint-cream (green) bars with a polar bear on the front, but really speaking in general, I can make almost ANY food a comfort food, I eat a whole bag of brussel sprouts, spinach, broccoli, or bowl full of cranberrys mixed with raisins and peanuts and chocolate morsels or almonds and raisins or grilled salmon in lemon juice and seafood spice all sealed in aluminum foil. I love food healthy or not. Most of my life I worked very hard many days bending over and lifting and throwing half the day and the other half catching and bending over and placing a total of 30,000 to 50,000 pounds in 40# boxes of metal. That was just one of 2 or 3 jobs I maintained. I could eat all my loving wife or the store or restaurant could feed me and burn it off w/o even thinking of it. I do not work any where close to that any more but sadly my appetite did not disappear with the work. My cardiologist says that there is a structural difference in the fat my body has compared to others due to it from eating too much of a volume of good foods, mostly. But it is still not good. This stuff that is supposed to arrive today or tomorrow is supposed to curb my appetite so my volume intake will decrease and a BONUS, my mind is supposed to have a cobweb sweep from them.

My wife's favorite is cashews mixed with chocolate morsels, when I haven't depleted her stock, that is. I told her to hide her cashews from me just this morn. Out of sight, out of mind.

. You just figured out why I started dancing again . I weigh twice what I did in college. So if you’ve ever seen those hippo ballerinas from the original Disney Fantasia ....

Right now . . . I have gotten into using baby raw spinach with things like tomatoes and mushrooms and leftover cooked veggies, and green and/or red bell pepper bits, and lentils and/or split peas, and a salad dressing or a mix of spaghetti sauce with yogurt. And it might get some chicken or pork pieces or cheese crumbled in.

And scissors can work nicely for chopping up spinach leaves or basil leaves. I might hold a big pinch of spinach and snip away. Also, you can put leaves in a bowl and put the scissor tips in and just snip around to your preference :)

I use baby spinach leaves a lot in salads. Although I like lettuce, its hard to buy for one and it seems to go off quickly. Spinach leaves last a few days. I just tear them with my hands (washed of course),

I also throw them into cooked meals (i.e., soups, stews, omelettes) where they wilt down in seconds.

I'm addicted to lemon meringue pies.

This one literally, really, actually came out of the oven half an hour ago.

It almost didn't make it. I had 4 egg whites (for the meringue)in a glass in the fridge last night. In a moment of extreme stupidity I accidentally knocked the glass over and spread broken glass and egg white across the entire kitchen floor.

Luckily I had spare eggs. Now I have 4 yolks looking for a purpose in life. :(

I don't know if this qualifies as a comfort food, but I have been breading and frying sliced summer squash for the last few nights. It's so good.
I love all kinds of squash but due to my diet I have to boil or bake mine. Absolutely LOVE squash. My best is Butternut but I love to boil summer squash till it is tender.

I'll take the compliment, but they're actually very easy to make - just a bit time consuming. The marbly top effect is from 'lifting' little peaks off the meringue surface with a spatula before putting it in the oven for a finishing 15 minute blast.
