Curiously, the use of wafers in the Eucharist does not have a very lengthy history. Even to this day the EO use a single loaf of substantial bread, as do many other denominations.

personally I think it should be unleavened bread, I know the EOC have been known to use leavened bread. To my knowledge the use of leavened or unleavened bread was never discussed in the scriptures but given Jesus’ example of the Pharisees and yeast and leavened bread I think I would be more comfortable using unleavened bread even tho that message had nothing to do with the Eucharist. I guess for me it’s kind of a way of saying I remember your message about the Pharisees and I prefer to use unleavened bread in honor of that message. Now I’m not knocking anyone who uses leavened bread just wanted to share my opinion on the subject.
