Well fortunately they make plenty of great bottled sauces these days and you can make any stir fry taste great w/ these....... Try brocc, carrots, onions and snap peas..... sauteed up w/ some sweet and sour sauce add in some pineapple chunks and a couple maraschino cherries.... throw all over rice and enjoy.

Or how about some diced potatoes...and/or sweet potatoes w/ some red bell pepper and some zuccini and summer squash w/ a spicey peanut sauce?

One of my favorite thinkgs in the world and also very healthy is just a plain old Baked sweet tater
butter and salt ...mmmmmmm good

let me know if you have something more specific in mind
and try looking around over here for some more ideas ....... www.foodtv.com

oooh i know something easy that you can make healthy or really unhealthy.

cook some noodles. whichever kind you like. get some tomato paste, or chunky pasta sauce if you like. get grated cheese (low fat if you are watching that) mix it all in a casserole dish. save enough cheese to sprinkle on the top. if you want to add any other veggies, mix them in there too. i like jalapenos to add flavor- put whatever herbs/spices you like. throw it in the oven. i have no idea how long- its really up to your discretion. usually about 350 and i stick it in for oh 40-60 minutes. just to help hold it all together. its kinda like a spaghetti casserole. i have no idea how to cook anything, but thats super easy. and if you add spices till you like it, its pretty good. if you want to add ground beef in there go for it. just cook all the ingredients first.

Oh, my, there's lots. If you go to a bookstore you should be able to find a book about easy crock-pot meals, one of those baby's can take a tough, fatty, gristly piece of pork shoulder and turn it into a thing of true beauty...

If you get Food TV look for a show called 30-Minute Meals, or go to foodtv.com and search for the show.

Zucchini? Try nuking one for about 3 minutes (covered in a bowl with a couple teaspoons of water). Put on a little butter, salt and black pepper. Simple but good.

Chicken? Try this: take a whole small fryer chicken (one of the scrawny ones in the bags), pull the bag of parts out of the body cavity, and cut out the tail (the triangular nub). Put in in the crock with 3 or 4 celery stalks and 3 or 4 carrots (cut how you like, don't forget to peel the carrot), a few whole cloves of garlic, a couple of cut up onions (not the huge ones). I like it best if there's more veggies than chicken. Cover it with water and put it on high until it starts to boil, then turn it down to low - the idea is to have it just barely bubbling. Let that go for a few of hours and you'll have a decent chicken soup. If you add a bit of fresh chopped dill and a mached up anchovy to the recipie (trust me) it'll be even better. Add salt only when it's done, you'll be less likely to oversalt if you add it to the bowl at the end.

Eat well.

.

Slice up the zucchini about 1/4" slices. Slice up a medium onion. Put Extra virgin olive oil (evoo) into a large skillet and heat up on medium. Brown the onion slightly. Add the zucchini and cover. Stir occasionally until soft (to your taste). Season anyway you want. Takes about 15 min for a large one.

Another one - same as above, but add sharp cheese shreds and melt.

Works with yellow squash, yellow zucchini and patty pan squash also! Yummy!

If you're looking ofr healthy, don't eat too many carbohydrates. Many people think that it is fat and not carbs that is bad. However, I have a brother who is diabetic and therefor have learned quite a bit about this from doctors and diatitions. Carbs turn into sugar when you eat them. Carbs and sugar are not good for you in any large amount. A note, pasta has plenty of carbs.

This is a lot the way I like to cook zuchinni...brown some onion in a bit of olive oil, add some chunks of zuchinni, squash, fresh mushroom slices...cook until the veggies are tender...in the last 5 minutes or so, throw in a couple of tablespoons of soy sauce. It's very simple but it's SO yummy...the soy sauce gives it a nice flavor and isn't nearly as overpowering as you might think. Very low fat, too. I eat it for lunch quite often or fix it as a side...even my 2 year old likes it :)

Love, Heather
