From what I can tell 2 of the sacraments in RC do not require a priest at all. That is baptism, where even a pagan can baptise you. And marriage where the Holy Spirit(or something to that affect) only knows if your actually married as the couple themselves are the officiants.

That's basically right, though I believe that since the Council of Trent an ordained person is required to witness a marriage. This was changed due to the presence of clandestine marriages and the problems they caused.
