Here is a quick and easy cookie recipe. Our son really likes these. Even my husband who normally doesn't like nuts in cookies likes these.



Cranberry-Orange Crisps

1 (15 oz.) pkg. of Cranberry-Orange Quick Bread & Muffin Mix
1/2 cup finely chopped walnuts or pecans
2/3 cup butter (melted)
1 egg
1 tbsp. sugar

In a large bowl combine quick bread mix, nuts, butter, and egg. Mix well. Shape dough into 1 1/4" balls. Place 3" apart on ungreased cookie sheets. With a glass dipped in sugar, press each cookie to 1/8" thickness. Bake at 350 degrees for 7-10 minutes or until golden brown around edges. Remove from cookie sheets. Makes 2 1/2 dozen cookies.



Make up a batch and enjoy! :yum:

I have a good recipe for APPLE BROWNIES which I can post here later today and I must ADMIT that it is excellent for breakfast too. So, see you later with a good recipe. As for cookies ... well I have some but will have to HUNT THEM DOWN so stay tune !!

My twist on No Bake Cookies

1/2 c milk
1 stick butter(no margarine)
2 3/4 c oats
1/2 c coconut
2 c sugar
1 tsp vanilla extract
4 TBSP cocoa powder
1/2 c crunchy peanut butter

Mix sugar & cocoa in bowl. Slowly melt butter in saucepan, add milk & sugar/cocoa mixture. Bring to boil for about 2 minutes. Add vanilla & peanut butter. After peanut butter melts, add oats & coconut. Mix well & allow to set for about 1 minute. Spoon out onto wax paper covered cookie sheet & allow to cool.

The crunchy peanut butter is thicker than creamy, which makes the cookies set up better(as does the butter) & gives texture w/the nuts.
The coconut adds flavor as well as moisture...sometimes I find no bakes to be dry.

The EASIEST EVER peanut butter cookies:

1 Egg
1 Cup Sugar
1 Cup Peanut Butter (the crunchier the better)

Mix the 3 ingredients together, form cookies and place them on a lined baking tray - they spread a little so leave some room between them. Bake at 350 deg for about 7 - 9 minutes. Leave on the tray for a minute or two after taking them out the oven. Transfrer to cooking rack and allow to cool completely. Try not to eat them at one sitting!

whoa...sounds awsum....and they dont need flour or anything?
