Here's mine:

HOT FUDGE PUDDING CAKE ~Single (Double) Batch

CAKE:
1 (2) C. sifted flour
2 (4) tsp. baking powder
1/4 (1/2) tsp. salt
3/4 (1-1/2) C. white sugar
2 (4) Tbsp. baking cocoa
2 (4) Tbsp. shortening (or butter), melted
1/2 (1) C. milk (whole milk is best)
1 (2) chopped walnuts (optional)

PUDDING:
1 (2) C. brown sugar
4 (8) Tbsp. baking cocoa
1-3/4 (3-1/2) C. hot water

Sift dry ingredients together. Stir in milk & shortening (or butter), mix until smooth. Add nuts and spread in pan. Sprinkle the brown sugar & cocoa (mixed together) over the entire batter. Pour HOT water over entire batter. Bake at 350° for 40-45 minutes.

Simple to make and is very RICH! When you pull out the cake, the pudding will look soupy....let it cool to thicken a bit. You can serve it with ice cream or frozen whipped cream to make it more nummy & sinful. Cake must be served warm.


note: if you're watching your cholesterol, use butter as it is NOT a hydrogenated fat like shortening is. Better that you bake the cake in a glass pan as well.
